Use meat drippings for shortening, and let the good flavor carry the meal forward. ISCUITS Let those meat drippings get firm in the refrigerator, then use them for making biscuits for meat shortcakes. Creamed hamburger is grand topping. Or cut link sausages into small slices, fry them and make a gravy from the drippings and serve them over the biscuits. MEAT PUS Use the same kind of bis cuit dough made with drippings for a covering for meat pie. Use leftover meat or small pieces of precooked meat, vegetables of your choice and enough thickened juice from the meat or vegetables to give moisture to the pie filling. Cover with biscuit dough snd bake in a hot oven (450 F.) until the crust is rich, golden brown. SUMMERTIME STUFFING Ever think of serving stuffing in place of potatoes . . . even though you haven't anything to stuff? It is really something the family will like. For 3 cups of bread crumbs, sdd $ tap. salt, i tap. pepper, sago or other seasoning to taste, saute sliced green onions, tops and all, and 15 cup meat drippings. Mix and pack into loaf pan or ring mold. (An egg or i cup of evaporated milk enriches and binds the stuffing together.) Bake in modcrato ovon (350 F.) for about one-half hour or until browned slightly. Serve as a meat accompaniment. ICONOMY CAKI Sift 2 cups all purpose flour with 2 H taps, baking powder, 1 tap. cinnamon and hi tap. cloves. Cream together 3 tbsps. short ening and 3 tbsps. meat drippings and add 1 cup of sugar gradually, creaming until smooth. Add 1 egg and beat well, then add flour mixture alternately with cup milk. Then odd 1 tap. vanilla or other flavoring. Bake in greased layer cake pans or muffin tins in moderate oven (375 F.) for about 25 minutes or until done. Fill layers if desired with chopped raisins and honey mixture. MOLASSES COOKIES Use those meat drippings in your favorite recipe for molasses cookies. You'll got an honest-to-goodness old-fashioned . flavor. And tho cookies make grand accompaniments to fresh fruit. VICTORY CANNING AND DRYING are current topics of conversation.
