Lefpeinut butter be the
home front standby
It's time we realized the importance of I
peanut butter as s nutritious food, and J
not a delicious mack food. Iu flavor J
is only one of the things in favor of;
peanut butter. It is a protein food and '
that means that it can take the place of
meat on the menu. It ta a food high in
energy value, the kind of food that sives
that power needed for heavy work. Aa
for mineral and vitamins, peanut butter
cores high. It ta particularly high in
aome of thoae alt-important B vitamins.
Let it be your standby food when the
menu needs building up in flavor and
heartineaa. Here are juat a few of the
many waya you can put peanut butter
to work in a nutritional way
PIANIST UTTER CUTIETS- Combine 1
cup hot medium thick white aaure and
'i cup peanut butter. Add 1 well-beaten
egg and mil well. Add 2 cups soft bread
erumba and aeaaoninga and mix well.
Form intoeutletaor pattiea.dip in beaten
egg, then cracker crumbs and fry until
well browned. Serve witn cneeae sauca.
PEANUT SUTTI R IN SOUPJ Add 2 or
3 tbaps- peanut butter to cream aoupa
for additional nourishment" and tempting
new flavor.
MANUT BUTT II SAUCS Blend in 1 to'
2 tbaps. peanut butter into white
aaure. tomato aauce and gravies. It;
adda extra richness and intriguing
nutty goodness. ,
DESSERT SAUCt Blend together S
tbepe. peanut butter and 1 cup powdered
sugar, then add well-beaten egg yolk
and 1 i cup lemon juice or aome other,
fruit juice. Just before serving-, fold in
stiffly beaten egg white. Serve on fruit,'
pudding, custard or cake.
MANUT iUTTI PUDDINO Mix 'i1
cup of cornstarch with a daah of salt and
1 tbsp. augar, and Vi cup cold water.
Combine 3 tbaps. honey or corn syrup
with 4 tbsps. peanut butter. Mix with
. cornstarch mixture, and cook in double
boiler for 10 minutes, stirring constantly.
Then cover and cook 15 minutes longer.)
atirring occasionally. Cool, pour into
sherbet dishes and chill.
MANUT UTTW AS A SPREAD Serve
peanut butter on the table instead of
butter. The family will like the change
. . . . When making sandwiches, spread
the bread with peanut butter-salad
dressing combination. It supplies added
food value, and is good around lunch-;
time.
.... To make butter go farther, cream'
it, add an equal portion of peanut butter,!
and blend well, mold and chill. Grand for,
toast, hot biscuits, waffles, muffins, and'
aa a between meal snack.
