Cottage Cheese Bing With Fresh Fruit (Serves 4 to 6) One and one-half tablespoons plain gelatin, 1-3 cup cold water, 3 cups cottage cheese, 1 teaspoon salt, teaspoon paprika, dash cayenne, I cup cream or undi luted evaporated milk, blackber ries and raspberries, 1 cup salad dressing. Soften gelatin In cold water; dissolve over hot water. Mash cheese with fork; add seasoning, cream or evaporated milk and softened gelatin. Place in refreg erator until set Unmold on bed of chilled lettuce. . Fill center with fresh berries mixed with salad dressing. Diced Meat Loaf (Serres 4 to 8) One-half pound beef chuck. 1 pound veal shoulder, i pound lean fresh pork, cup stock or water, 1 teaspoon salt, 1 egg, beaten, 1 cup cracker crumbs, 1 tablespoon lemon Juice, 1 pound salt pork. Cut beef, veal and pork into 1-inch cubes. Combine all re maining ingredients, except salt pork, mixing thoroughly. Pat firmly into loaf pan. Slice salt pork thin and lay over top of loaf. Bake in moderate oven (350 deg. F.) for 1 hour. Turn onto platter, garnish with water cress or parsley, and serve pip ing hot,. MENU ' BREAKFAST: Stewed fresh pears, oatmeal, raisin muf. fins, coffee, milk. LUNCHEON: Leftover vegetable salad, toasted hard rolls with melted cheese, bowl of plums and grapes, iced tea. milk.
