GAYNOR MADDOX NEA Service Stan writer Those Inexpensive meat recipes will muka a feint for Sunday without upsetting tho budget. Bummer Style Pot Roast (Serves 6 to 6) Three pounds chuck of beef, salt, popper, 1 cup flour, 1 cup water, Wlpo meat with cloth. Season to tuato; rub flour Into incut until ail has bean used. Place meat In largo kettle; pour In water and cover tightly. Bring to simmer, and continue to cook at simmer stago for about 21 to 3 hours. Add more water if needed. If meat Is kopt at very low simmer, more water will not bo needed. Hero's a wonderful dish with a little-used delicacy. Pork Liver Casaerole (Serves 4 to 6) One and one-half pounds pork liver in one plcco, t cup flour, S slices bacon, 1 large onion, sliced, 1 cup diced celery, 1 cup cooked tomatoes, 1 teaspoon ault, 1 teaspoon, pepper, I cup hot water. Wipe liver with damp cloth and dredge in flour. Pan-broil tho bacon until Just dona; drain. Suute the onion and celery In bucon drippings until soft and yellow, Add flour that did not cling to liver, and stir until smooth. Add tomatoes, salt and pepper. Cook, stirring constant ly, until mixture thickens, Place liver In casserole, add tomato mixture, water. Cover and bake In a moderuto oven (390 deg. F.) for 00 minutes. Remove lid, place bacon over liver, and cook, uncovered, for an additional 10 to 15 minutes. MENU BREAKFAST: Grapes, dry wholewheat cereal, bacon and eggs, enriched toast, Jam, cof fee, milk, DINNER: Summer-stylo pot roast, buttered new carrots with chopped parsley, mashed potatoes, lettuce, cucumber and tomato sfllsd, peach Ice cream, cookies, coffee, milk.
