Suc cessful home canning depends upon two things: killing or ren dering inactivo bncterin present on food; and preventing further contamination by sealing In air tight jars. In order to kill or Inactivate bacteria In canning, adequate heat must bo applied. Pressure cookers are recommended for processing all vegetables except tomntoes and all meat, fish and poultry. These foods are non acid and require more heat than other foods for steriliza tion. One vegetable available now Is peas. While they are consid ered a little moro difficult than some vogotables, there are a few simplo rules to follow In avoiding trouble. First In Im portance la s e 1 c 1 1 o n.f.Fcas should . be young, tender and freshly, gathered. Bo sure to discard those that nro yellow or hard as they are too old and their keeping qualities arc doubtful. The hot pack method should be used for vegetables. This FDR Signs Farm Bill; Wheat to Sell Below Parity WASHINGTON, July 24 (P) President Roosevelt signed an appropriation bill Thursdny pro vided $805,000,000 for tho agri cultural department for tho cur rent fiscal year and authorizing salo of government-owned wheat for livestock feed nnd Industrial uses at bolow parity prices, Signing of tho bill by Mr. Roosevelt cleared tho way for movement of millions of bushels of this wheat from heavy pro ducing areas into livestock feed ing nrcng whero it Is needed to supplement corn and other feed stuff s. In demanding the right to sell government whent at sub-parity levels, the administration said tho grain was needed as feed to encourage farmers to produce a maximum quantity of wheat, dairy and poultry products for United Nations wnr needs. Tho following recipe' has been thoroughly test ed: Peas Wash, shell and sori accord ing to size. Prccook 3 to 7 min utes depending on age and size o( pens. Pnck loosely to within one inch of top into clean Jars. Fill to within one Inch of top with water In which peas were precooked or boiling water. Add onc-hnlf teaspoon of salt to each pint Jar. Adjust Jar cap and process In pressure cooker 43 minutes at 11 pounds pres sure for the altitude of Klam ath county. Do not allow Jars of vege tables to stand after prccooking but get them into canner for processing immediately. As soon as Jar Is filled adjust Jar cap. For "self-scaling" cap place lid on Jar with scaling composition next to glass and screw the band tight.
