Try These Recipes for a Reputation as "Good Cook" On the market now Is one of the largest crops of mature onions ever produced. Now that they are plentiful, try them In mips, serve them with mest, mix them with other vegetables In all sorts of dishes. Try appetizing onion soup made with meat broth. Chop. 6 medium onions flno. Brown them lightly in 2 tablespoons fat, Add 1 pint boiling water and slm mur the onions for about 20 min utes, or until they are tender. Add 1 quart meat broth. Thicken tho soup with mixture of 4 tablespoons flour mixed with 4 tablespoons cold water. Add salt and popper, cook for few minutes. Four soup into bowls, put's slice of toasted bread on top, sprinkle with cheese, if you like. This makes S good serv ings. SOUP IS GOOD MIXED WITH POTATOES For quick onion and potato soup, use this method. Dice 3 tablespoons of onions, and 2 cups of potatoes. Add 1 quart of milk. Cook slowly until the potatoes and onions are tender. The starch from tho potatoes will thicken the milk somewhat Thicken more, if you like a soup with a little more body. Season to taste. Some families like a salad of very thin onion slices, with or without cucumber slices, served with a little vinegar over them. If you want to take out some of the strong onion flavor be forehand, soak them for awhile In salt water. Add these "vine gar", onions to other salads for little different taste. Paprika Chicken (8arvaa 4 to g) Otfe fowl, flour, salt and pep per, i cup shortening or chicken fat 1 clove garlic. 11 table. spoons paprika, 2 cups stock or waier, i cup sweet or sour cream, 2 tablespoons flour. Slnno. wash, and tnln fnuil Dredge lightly with flour, salt ana pepper, saute until golden brown In fat or ahortenlns. Rit. move excess fat. Add stock (made from peeled chicken feet, the neck, glblots and wing tips), garlic and paprika. Simmer gen tly 21 to 3 hours. Make paste with cream and flour and add to chicken and stock. (Add water to moke 2 cups). Heat Just to boiling and servo garnished with fried bread cubes. Cream of Carrot Soup .11 cups sliced carrots, 1 slice onion, few sprigs parsley, 3 cups water, 1 tall can evaporated milk, 1 tablespoon butter, 1 tablespoon flour, salt, pepper, mace. Cook carrots with onion, par sley and water until they are tender. If left-over carrots are used, cook them for only few minutes. Rub carrots through sieve, add milk, heat almost to the boiling - point, and thicken with flour which has been blend ed with butter. Season with salt, pepper, and a few groins of mace. MENU BREAKFAST: Rhubarb sauce, oatmeal, toast, coffee, milk. LUNCHEON: Crenm of car rot soup, enriched hard rolls, baked apples, tea, milk.
