Here's how you do itl Tlic Sperry Matter Recipe for Griddle Cites 2 cups Sperry Drifted J j teaspoon salt 1 tablespoon sugar Snow Flour 4 tcasp. baking powder 1 ecc cups railk 1 tablespoon melt ed shortening Measure and sift dry' iniredients; beat eg until very light, thca add milk and combine mixtures, beating with rotary egg beater until free from lumps. Add melted shortening and bake at once. If batter is not baked icon after mixing, beat well again before using. If only one-half recipe is needed, still use the whole egg. roptrvcrs Except that baking powder is omitted, the Pop over recipe is almost identical to thcGriddlc Cake recipe. Use only 1 cup of flour, 1 cup of milk, 2 eggs, i4 teaspoon salt and 1 teaspoon of melted butter. Beat flour'atld milk until smooth : nod 1 cgr, unbeaten and beat mixture one minute; add other egg and beat again; then add melted butter. Meanwhile have cus tard cups or Iron muffin pans heating. They should be hot Grease well just before adding batter, 23 full. Bake in hot oven (400 F.)l5 minutes, then re duce heat and bake 30 minutes longer. Bake thor oughly, or Popovers may fall. Pineapple fritters Use left-over Griddle Cake batter, or prepare Master Recipe. Drain slices of pineapple: dip into batter, then drop into hot deep fat eiaj 'try until a golden brown on each side. (A small ubc of dry bread dropped into fat should turn go'.dcn brown while you count forty.)
