DON'T WASTE SOUR MILK
The souring milk is due to the lac­
tic acid-forming bacteria which are
present in milk. These bacteria, bo
sldese souring milk, are antagonist ,'
to most of the common bacteria and
because of this, sour milk Is commou'y
looked upon as having antiseptic pro
pertles. The antiseptic values of soul
milk is believed by authorities to be
the means of prolonging life amons
the people who use it in appreciable
amounts.
Sour milk, like sweet milk, Is a
wholesome and nutritious food. It ran
be used in baking in place of sweet
milk and usually results In lighter and
more tender products. When substltu
ting sour for sweet milk these rules
have been found practicable:
