These bacteria, bo sldese souring milk, are antagonist ,' to most of the common bacteria and because of this, sour milk Is commou'y looked upon as having antiseptic pro pertles. The antiseptic values of soul milk is believed by authorities to be the means of prolonging life amons the people who use it in appreciable amounts. Sour milk, like sweet milk, Is a wholesome and nutritious food. It ran be used in baking in place of sweet milk and usually results In lighter and more tender products. When substltu ting sour for sweet milk these rules have been found practicable: ble boiler until thick. Pour into baked pie crust, cover with meringue made from two egg whites and two table spoons sugar, and brown in a very slow oven. The raisins may be added whole or ground.
