Strides made in food pro cessing. preservation and pack aging over the last 20 years are only a harbinger of what's ahead, believes Dr. H. W. Schultz, head of the Oregon State University food and dairy technology department. Although there has been no appreciable increase in number of basic foodstuffs, more than 6.000 food items are now avail able in supermarkets — four times the number available 20 years ago. Already in the de velopment stage. Dr. Schultz continues, are half of the food products expected to be in supermarkets by 1970. What are some of these foods of the future? Bread and other baked goods should undergo flavor and tex ture studies resulting in com mercial products that resemble homemade favorites. Cake mix es will enjoy continued popular ity with introduction of many new flavors and kinds. Red meats—including both beef and pork—will be tender ized by injection of enzymes at slaughter guaranteeing tender, flavorsome steaks and chops. Freeze-dried, precooked fresh and cured meats could become popular, says Dr. Schultz, if costs of freeze-drying can be reduced. Scientists are at work to im prove butter spreadability and flavor. Cheese lovers can look forward to consistently super ior aged cheese in the future. Dried cottage cheese, that can be stored on the cupbooard shelf, is also a possible new comer, says Schultz. More ready-t o-w a r m-a n d- serve frozen seafoods ' will make it poccible to serve fresh tasting seafoods thousands of miles inland any day of the week.
