Cover a four-pound chicken with
water aud simmer until tender. Add
to tbe water four chopped onions, a
chopped clove of gnrlio, teu whole all
spice and cloven, a stick ot oinnamon,
three obopped red Chili peppers and
two scant teaspoonluls ot salt. When
the Chicken is done take It from the
liquor and cut the meat from tbe
bones, then out this into small dloe.
Strain tbe liquor, return to the Are,
add tbe chicken and enough yellow
cornnieal to make a thick mush, boil
ing about teu mluutes. Stir In greeu
corn out from twelve ears, a pound ol
seeded raitiius and a half teaapoonful
of cayenne pepper. Mix thoroughly.
Fill corn husks with this mixture aud
tie them tightly at both ends, fat
into bot water and boil for hilt an
hour.
To Clean White Paint,
To clean white paint a flannel wrung
out of hot water rubbed on a square
of soap, then dipped in pipeclay
mixed as cream with water. Dry af
terward thoroughly tbe way ot tbe
grain of wood wltb a clean cotton
duster.
Orange, Walnut and Cress Salad.
Peel some tart oranges and remove
tbe white skin, wbioh is bitter; slice
aoross in tbiu slices, and arrange in
doable rows on a dish ; scatter wal

Chocolate Caramels. On eake of
Baker a chocolate, one cop of tweet
milk, one cap of molaseee, ooe pound
of white sugar, a piece of butter the
size of an egg; season wltb vanilla to
taste half a teaspoonfal will probably
suffice.
Chocolate Creams. fako two oops
ct granulated sugar and half a cup of
cream. Boil for Ave minutes from
the time that it begins to boll bard,
oot from tbe time that it la set on
tbe stove. After 'taking it from tbe
Are set it in cold water, attiring until
it Is stiff. Flavor as soon aa It is re
moved from the stove wltb a teaspoon
ful ot vanilla. When tbe mixture baa
stiffened drop it wltb a spoon on
waxed paper and as soon as it Is eool
enough mould into balls.
Have a cake of chocolate in a small
tin pan, set it in boiling water and
let it dissolve. Then take the tails
and roll in tbe melted chocolate, lift
tbem out with a fork and lay them oo
tbe waxed paper to harden.
Mint Creams. Mint creams are
thought to aid digestion, and are
frequently served at dinners when
tbe finger bowls ate brought In. Ibey
may easily be made at borne.
Put in a granite sauoepan or tbe
chaflng dish two cnpfuls ot granulated
augar and a half cap ot water. 8tlr
until tbe sugar is dissolved, but no
longer. Remove tbe spoon and after
tbe syiup begins to boil, boil just
eight minutes. Remove from tbe Are,
add eight drops of peppermint, ttlr
hard, then drop from tbe tip ot tbe
spoon on waxed paper or a marble
slab.
Walnut Prunes. Choose fine large
prunes, take out the stonea and pot
in tbeir place one-bait of an English
walnut. Piess tbe edges of tbe prunes
nicely down upon the nut.
Cream Dates. Remote the stonea
from fine large dates and All tbe cav
ity with the cream candy while it Is
toft.
English Walnuts. -Take tbe half
nuts carefully from tbe shells, In or
det not to break them ; make cream
candy according to the directions
given above for the chocolate creams,
and press half a nut on eaob side of
tbe balls of candy while tbey are toft,
pressing to aa to flatten tbe cream.
Tbe Cream tor Candies. A simple
rale for tbe cream wbioh ia tbe foun
dation of most French candles it at
follows:
Boil two pounds of granulated
augar and a cop of water in an agate
ware sauoepan. Do not ttlr it at all,
but when tbe syrup baa boiled rapidly
for eight or ten minutes or less dip a
fork it It and hold it above 'he pan.
If a long bairlike thread can be seen
on tbe fork remove tbe syrup from
the 5 re and pour it Into a bowl to
oool. When you oan bear your Anger
In it begin to stir tbe syrup vigorous
ly with a spoon until i. ia a thick
paste, resembling lard. Knead this
thoroughly and then set it In a oool
piaoe until it is needed. When yeu
are ready to use it, it may be made
flexible by placing tbe bowl contain
ing it in a pan of bot water. Then
it may be cat into different parts.

downtown dealers in confectioners'

Peanut Candy. Homemade peanut
candy might well be labeled "sore to
please." Shell one quart of peanuts;
skin and roll fine. This should make
just a ooflee oapful of granulated
sugar into candy.
Set oo a bot Are and stir constantly
until It melts, remembering that it
must melt quickly to be a success.
Meantime, put tbe peanuts in the
oven to beat, and have tbe pant bat
tered and plsoed on tbe back of tbe
range, where Ibey will be bot. As
toon as tbe sugar is melted poor tbe
hot peanuts in it, take dlreotly from
tbe Are and pour it Into tbe bot, but
tered pans. Tbe candy when cold can
be broken into pieces and should be
tbin, orisp and shiny.
When nailing into bardwood, tbe
nails are ant to bend. To pretent
tbisi, dip the point of eaob nail into
oil, lard or other grease before ham
mering it In.
When grease ia spilled on tbe kitch
en table or Aoor, pour cold wttei on
it at once to prevent It soaking Into
tbe wood. It will quickly harden and
can be lifted with a knife.
Tbe grimy mark found often at the
top ot tbe porcelain washbowl or in a
Dorcelain tub that has not bad proper
care will yield to a treatment of kero
sene cil applied with a Aannel alotb.
Fine table linens should be frequent
ly changed in order that baid robbing
may be unnecessary in laundering
tbem. as frequently tbe cleaning pro
cess is severer than aotual wear.
