greater to warrant the expense. True,
he may not learn a great deal in the
short course, but it will be enough to
open his eyes to the possibilities, and
he will be placed on the right track
to study and work by himself. Talk
to the boy about it, and write to the
agricultural college of your State for
detailed information.

Peach Meringue.
rare, quarter and stone one quart
of peaches, or drain the peaches from
the juice of one can. Place in an
earthen dish and sprinkle with sugar,
Spread over them the whites of three
eggs beaten very stiff and sweetened
with three tablespoonfuls of powdered
sugar. Set in the. oven till the top is
colored a delicate brown, and. then re
move to a very cold place to chill it
thoroughly, riace a crinkled ring, of
fancy paper around the dish and place
it on the table with an asbestos mat,
Serve the pudding with a custard.
Mushroom Sauce.
One pint mushroom buttons, salt to
taste, a little grated nutmeg, one blade
pounded mace, half pint cream, half
pint milk, two ounces butter, i flour to
thicken. Kub the buttons with flan
nel and salt to take off the skin; cut
off the stalks and put In a stewpan
with the above ingredients, previously
kneaded together with the butter and
flour; boil the whole for about ten mln
utes. stirring constantly. Time, ten
minutes.
Oyater Salad.
Cook for a few moments a pint of
oysters in their liquor; drain and cover
with this dressing. Beat well two
eggs; add to them one-fourth cup each
of mUk and vinegar, one-half teaspoon
ful each of mustard, celery salt, and
salt, a dash of cayenne, aud two table
spoonfuls of butter; cook in double
boiler until thick. , Pour over the oys
ters and when cold set on Ice. Serve
on a bed of watercress after mixing
with a scant pint of diced celery.
Date Pudding.
Stone and cut a pound of good
sound dates into small pieces. Mix a
teacupful of sifted flour, a teacupful
of sugar, a quarter of a pound of fine
ly minced suet, and a quarter of a nut
meg, grated. When this is well mlx
ed, add enough cold water to make

How to Polinh Furniture.

use first wood alcohol and then linseed
or" olive oil. This treatment is excel
lent for keeping any polished furniture
in order and is one of the few things

Soft Gingerbread.
Cream one-half cup of butter "and
lard, mixed with one cup of sugar,
Add a cup of molasses, a cup of sour
milk, a teaspoon ful of baking soda dis
solved in a little boiling water, two
teaspoonfuls each of powdered cinna
mon and ginger, a teaspoonful each of
powdered cloves and nutmeg and
three enps of flour. Bake in a loaf.
