It's a time, too, when you'll probably need extra food on hand, espe cially "nibbling food" and snacks. For guests or family, Apple Peanut Squares are certain to score a hit. The squares are de liriously flavored with grated apples and brown sugar and a crunchy peanut topping. Whta keeps them fresh? Reba Staggs, well known home econ omist experienced in recipe de velopment, says it's the shorten ing, lard, that keeps baked goods moist and fresh to the last crumb. You'll find lard so easy to incorporate in all your baked goods, and for pie crusts lard is almost a must. Apple-Peanut Squares are en ticing just as they are, but for an elegant treat at dessert time try topping them with whipped cream. Apple-Peanut Squares Two and one-half cups sifted enriched flour; one teaspoon baking powder; one teaspoon salt; one teaspoon soda; one half cup lard; one cup granu lated sugar; one-half cup brown sugar; two eggs; one cup milk; two cups coarsely grated ap ples; one-half cup coarsely chopped peanuts; two table spoons brown sugar. Whipped cream, if desired. Line a 9'i by 13 by 2-inch baking pan with waxed paper. Sift together flour, baking Dowdcr. salt and soda. Cream lard, granulated sugar and one half cup brown sugar until light and fluffy. Beat in eggs, one at a time. Add sifted ingredients alternately with milk, mixing thoroughly after each addition. Fold in apples and pour batter Into baking pan. Mix together peanuts and two tablespoons brown sugar. Sprinkle evenly over batter. Bake in a moderate oven (350 F.) for 50 to 55 minutes.
