Portlander Burned
In Apartment Fire
PORTLAND (UPI) - John T.
Powers, 53, Portland, suffered
first and second degree burns
. on his shoulders, chest and legs
. Friday night in a fire at the
Almira Apartments here.
Firemen said Powers was in
bed when the blaze broke out,
He was treated at Good Samari.
1 tan Hospital and released.
Damage to the apartments was
estimated at $650. Cause of the
fire was under investigation
Lakeview Man Shot;
Suspect Being Held
LAKEVIEW (UPI) - Tony L.
Martin, Lakeview, was report
ed in critical condition with a
bullet wound in his abdomen
Saturday at Lakeview Hospital.
A man identified as lone Ed
wards was being held pending
further investigation.
Officers said the shooting oc
curred early Saturday. No other
details were Immediately avail

Mrs. Eisenhower to suit the oc

Tacos are as popular in Mex
ico as our satisfying, ever pop
ular American hamburgers are
here. Like the hamburger, it
takes to variations dependent
on taste and what is available.
Actually it is a tortilla (both
wheat and corn tortillas are
available fresh daily or canned
at local stores) filled with
cooked ground meat, chicken,
refried beans or avocado filling
. . . many times a combination
of two or more.
Grated cheese, freshly chop
ped onion, sliced or diced to
matoes andor shredded lettuce
are considered essential by
many beef taco lovers.
Beef Tacns. Many like I h e
meat cooked In a sauce as in
this recipe; others prefer the
meat sauteed, salt and peppered
to taste and a hot or mild taro
sauce on hand for pouring into
the finished product. In any
event don't wait until "manana"
to enjoy this flavorsome "ham
burger" from south of the bor
der. Recipe makes enough filling
for 8 tacos; more if cheese, on
ions, tomatoes and or lettuce
are added.
l'i pounds ground beef
13 cup chopped onion
2 tablespoons shortening
U cup chopped green pepper
I clove garlic, minced
23 cup chili sauce
l'i teaspoons salt
1 teaspoon Worcestershire
sauce
8 or more corn or wheat
tortillas
Saute beef and onion in short
ening. Add green popper and
gai lic. Combine chili sauce with
salt and Worcestershire sauce;
stir into meat mixlurc. Simmer
10 to 15 minutes; stirring occa
sionally. Fry tortillas on hot, ungreased
griddle or skillet until browned
in spots, turning to brown both
sides.OR deep fat fry until just
the desired crispness; fold in
half; cover, keep warm in tow
els or foil, or in oven. Kill each
tortilla with approximately one
half cup meat mixture (loss if
other additions are to he made).
Chicken Tacos: Saute one
third cup chopped onions and
one-fourth cup chopped green
pepper in two tablespoons short
ening until crisp-tender. Add 3'j
cups cubed, cooked chicken, one
cup chill sauce, one-fourth cup
blanched almonds, slivered, two
teaspoons Worcestershire sauce,
one teaspoon salt and one tea
spoon apple or cider vinegar.
Stir gently, but well. Heat thor
oughly. Fill fried tortillas as
above.

La Bonne Fondue Swiss
International Favorite
Cheese Fondue, or as the
Swiss refer to it "La Bonne Fon
due," is a swirling, dipping,
dunking dish supreme. Every
one at the table becomes an ac
tive participant in the joyful
ritual of eating as they dip bite
size pieces of Italian or French
bread into its savory goodness.
Recipe makes four servings.
1 pound Swiss (Emmentaler)
cheese, shredded or finely
cut
1 teaspoon cornstarch
1 clove garlic, cut in half
2 cups dry white wine
3 tablespoons Kirsch or cog
nac, optional
Nutmeg, pepper or pap
rika, to taste
2 loaves narrow Italian or
French bread cut into bite
size pieces.
Rub cooking utensil well with
garlic or crush garlic with gar
lic crusher. Pour in wine; set
over slow heat. Toss shredded
cheese with cornstarch. When
wine is heated to point that air
bubbles rise to the surface, add
cheese by handfuls, stirring con
stantly with wooden spoon. Keep
stiring until all the cheese has
been added and mixture is
smooth. Add Kirsch, if desired.
Stir in nutmeg, pepper or pap
rika to taste.

Dessert Pancakes
Plattar, made with cottage
cheese and topped with a tart
sweet Maraschino Cherry
Sauce, Is a Swedish dessert pan
cake delicacy. Recipe makes
six servings.
Separate three eggs. Beat to
gether egg yolks, two table
spoons sugar, one-eighth tea
spoon salt and three tablespoons
melted butter. Add one-half cup
sifted all-purpose flour alter
nately with one-half cup milk,
boating well after each addiiton.
Force one cup (one-half pint)
creamed cottage cheese through
sieve; mix into batter. Beat egg
whites until stiff but not dry;
fold into batter. Melt butter in
large skillet or on griddle; spoon
in one tablespoon batter for each
pancake. Brown lightly on both
sides; serve hot with sauce.
Maraschino Cherry Sauce
Blend together one teaspoon
cornstarch, one-fourth cup sug
ar, one-fourth cup maraschino
cherry juice and one-fourth cup
water. Cook, stirring constantly,
over low heat until slightly thick
ened and clear. Stir in two ta
blespoons softened butter, one
third cup lemon juice and one
half cup chopped red marasch
into cherries (about 20 cher
ries). Pantry Shelf Supper Ring
Convenient. Satisfying
Exactly as its name implies,
this Pantry Shelf Supper Ring
utilizes a number of conveni
ence foods that have become
staple items over the past few
years. Though meatless, this en
tree is thoroughly satisfying to
the inner man. Pitted ripe olives
are at their best here, combined
with pre-cooked rice, tomato
sauce, seasonings and grated
cheese. This may be served top
ped with creamed ham, hard
cooked eggs or vegetables, or as
a side dish with meat or fish en
tree. 1 package (14-ounce) instant
rice
l'i tablespoons instant minced
onion
2 teaspoons seasoned salt
1 can (8-ounce) tomato sance
1 cup pitted ripe olives
l'j cups grated Cheddar cheese
Cook rice with onion and salt
according to package directions
using tomato sauce as part of
the liquid. Cut olives into wed
ges. Add olives and cheese to
hot rice; mix lightly. Pack into
oiled lW-quart ring mold. Heat
in moderate 350 degree, oven
10 to 15 minutes or until re-hcat-ed

New Agreement

dented and amicable conclusion
of a new labor-management
agreement 11 weeks before ex
piration of the existing contract
has been reported by spokesmen
for the Portland chapter, Asso
ciated General Contractors and
the Western Washington District
Council of Laborers.
The agreement is subject to
ratification by both union and
AGC members. It becomes ef
fective Jan. 1, 1964, and expires
May 31, 1967.
The joint announcement was
made by Leonard A. Runkle,
president, Portland chapter,
AGC, and L. W. Hashman, exec
utive secretary, Western Wash
ington District Council of La
borers. Runkle commended Hashman,
chairman of the union negoti
ators, and Floyd Summers, Med
ford, chairman of the AGC ne
gotiating committee, for the ex
cellent spirit of cooperation
which prevailed during negotia

M cup orange juice
Crumbled dried mint
leaves
Mix cornstarch with gravy in
saucepan. Add currant jelly, or
ange juice and mint to taste.
Cook over low flame, stirring
constantly, until mixture is
slightly thickened. Heat slices of
lamb in sauce; listen to exclam
ations of pleasure.

Montez Transferred
To Portland Post
Leo M. Montez, chief clerk in
the Southern Pacific traffic de
partment in Medford, has been
promoted to a similar position
in the Portland district office
effective Nov. 1, according to
W. D. Longmore, district freight
and passenger agent.
Montez began with the com
pany as a telegrapher at Salem
in July, 1955, and transferred
to traffic work in October, 1959.
His position will be filled by
John Z. Masson, present diver
sion clerk at Medford who joined
SP as a clerk in the operating
department in July, 1953. Mas
son transferred to the traffic
department in November, 1959.
