Occupy ing an area of only 25,332 square miles this small Asian country has a population of over 9'2 million, which means the pop ulation density is approximately 381 people per square mile. Ceylon is heavily dependent on food imports particularly rice, the staple food of the country. The three major exports are tea, rubber and coconuts. This Ceylon-style curry served with rice and "Onion Samnoi as an accompaniment is consid ered a national favorite wnen mealtime rolls around, accord ing to representatives at the United Nations. Recipe makes four to five servings. 1 pound uncooked medium size shrimp 1 medium onion, sliced 'i to 1 teaspoon ground red pepper ', teaspoon tumeric 2 cloves garlic, sliced 2 slices green ginger or Mt teaspoon ground ginger 1 teaspoon salt 2 inch piece of stick cinnamon 3,4 cup milk or coconut milk 1 tablespoon salad oil Juice of Vz lime Shell, d e - v e i n and wash shrimps. Put shrimps, half of the onion slices, and all season ings and spices in a kettle. Add milk. Boil 10 minutes. Brown remaining onion slices in salad oil and add to shrimps. Add lime iuice. Stir. Simmer 10 minutes. If desired thicken the liquid with one teaspoon corn starch mixed with one-quarter cup water. Boil until thickens. Serve as a main dish with hot cooked rice. 'Onion Sambol Peel and finely slice one large onion, one medium cu cumber and one medium green pepper from which the seeds have been removed. Combine in bowl. Add juice of one-half lemon, one-half teaspoon salt and one-half teaspoon ground black pepper. Mix lightly. Place in double boiler. Add milk and cook over boiling water until rice is tender. Add the one-half cup noney, lemon juice, lemon rind salt and beaten egg yolks. Con tinue cooking until mixture thickens. Turn into 1'6 quart ouuerca oaKing dish. Beat egg whites until stiff: gradually adding the two table spoons honey and the lemon ex tract. Pile on top of pudding and bake in a moderate, 350 de gree, oven 20 minutes or until meringue is lightly browned. Or fold whipped egg whites into the hot custard and bake as a souffle. Liver Cheese Balls These are party-right anytime of day or night. For variation they can be rolled in finely chopped walnuts, parsley or chives. For 24 small balls: Blend one 4'i ounce can liver spread with one three-ounce package cream cheese. Form into small balls and chill. When chilled roll in the finely chopped wal nuts, parsley or chives. Serve with toothpicks or thin pretzel sticks for spearing. hpotlight on Specialty Melons. Cantaloups have been tempting us tor months but to day's spotlight is on the "spe cialty" melons. All are superb eating, a treat anytime. Honey balls are small, round, usually slightly-netted; vary in color from whitish green or gray to light yellow. Honeydews are bluntly oval in shape and considerably larger than honey balls, weighing four to eight pounds; creamy white or cr pounds; creamy white or creamy-yellow when ripe. Casabas are nearly round in shape but may be somewhat pointed at stem end. Rinds are wrinkled or furrowed. These weigh five to seven pounds each. Cranshaw melons are pointed at stem end and rounded at blossom end, usually weigh four to eight pounds; rind is general ly smooth; no netting, very lit tle ribbing; usually mottled green and gold when displayed tor sale. Persian melons somewhat re semble cantaloups with finer, flatter, less pronounced netting deeper green background. Per sians usually weigh six to seven pounds. (rapes Galore.
