Eggplant Slices,
Parmesan Cheese
Add to Casserole '
Summer living is easy and
so is casserole cooking, espe
cially when it is done with
convenience foods. Even shop
ping is simpler when you buy
the large size cans that serve
four generously and six ade
quately. For instance, a 40
ounce can of spaghetti and
meat balls is ready to be Just
spooned into a casserole for
baking.
Give it a summer time lifl
with eggplant slices, coaled
with parmcsan cheese, and
browned appealingly before
being added. Bake it all to
gether fur a simple Mid deli
clous family supper dish.
A bright green salad.
crunchy and cool, and thin
crisp bread slicks make fine
accompaniments for this dish.
The recipe (or spaghetti
meat ball-eggplant casserole
calls for one medium egg
plant; four tablespoons par
mcsan cheese; five table
spoons cooking oil and one
40-ounce can of spaghetti and
meat halls.
Set the oven al 373 degrees.
Wash eggplant. Cut into
about quarter inch slices.
Coat eggplant slices with
about two tablespoons of the
cheese. Heat oil. Lightly
brown eggplant slices. Drain
on paper toweling. Cut in
half
Dace spaghetti and meat
balls in medium sized baking
dish; Place eggplant slices,
skin side up, into the spaghet
ti and meat balls. Sprinkle
top with remaining cheese.
Bake 20-25 minutes. Makes
four to six servings.
To preserve the aroma of
a cantaloupe and prevent it
from permeating other foods,
wash the melon, wrap It tight
ly in aluminum foil, transpar
ent plastic wrap or several
layers of wax paper, and refrigerate.
