Old-Fashioned Green Beans and Bacon y4 lb. green beans, cut 8 slices bacon 2 medium-sized poUtoea, pared and cut in Vi-in. pieces 1 small onion, sliced V cup water Vi teaspoon salt 1. Cook green beans in 8 small amount of boiling salted water about 10 min., or until just tender. 2. Dice the bacon and fry until crisp. Add potatoes, green beans, and remaining ingredients to bacon and fat; cook, covered, about 15 min., or until potatoes are tender. i servings Apple Pandowdy De Luxe 8 to 8 (about 2 lbs.) medium-sized tart cooking apples, pared and sliced 1 cup sugar 1 teaspoon ground cinnamon Vt teaspoon salt 1 teaspoon grated lemon peel 1 tablespoon tenon juice 3 tablespoons butter, melted Pastry for 1-crust 9-in. pie 1. Put apple slices into a 1-qt. baking dish. Sprinkle with a mixture of the sugar, cinnamon, salt, and lemon peel. Pour the lemon juice and melted butter evenly over the top. 2. Bake at 400 F 25 to 30 min., or until apples are almost tender. Remove baking dish from oven and increase heat to 450F. 3. Prepare pastry and roll out to fit over apple mix ture. Slit pastry in several places to allow steam to escape during baking. Place on apple mixture. 4. Bake at 450F 10 min., or until pastry is golden brown. Serve hot with Lemon-Nutmeg Sauce or thick cream. 6 to 8 servings Lemon-Nutmeg: Sauce Mix Vi cup sugar, 1 tablespoon cornstarch, and Vs teaspoon salt together in a saucepan. Add lVi cups boiling water gradually, stirring constantly. Continue to stir and bring mixture to boiling; simmer 5 min. Blend in 3 tablespoons butter, 1 teaspoon grated lemon peel, 2 tablespoons lemon juice, and Vz teaspoon ground nutmeg. Serve hot.
