Redden Lists Four Major Points Why He's Against Bill A 3 Representative James A. Redden (D-Jackson) has issued an explanation of his opposi tion to the Sunday closure law because of the heavy volume of mail he has received on the measure, HB 1256. Redden said he would at tend committee hearings on the bill to satisfy himself that his reasons for opposition are sound. He listed these reasons un der four major points: 1. Advocates claim the law would free the Sabbath for family purposes, and yet ig nore the opposite effect it would have on minorities who observe another Sabbath. They would have the choice of working their Sabbath or competing five days with com petitors who work six". Throughout centuries, poets, philosophers and proverb-makers have been inspir ed to write odes and tributes to this : colorful and versatile fruit. Cherries have long been identified with love and marriage. "Can she bake cherry pie, Billy boy?" The fruit with the romantic past is also a fruit with a glowing future as our west coast growers step up produc tion to meet demands of can ners, freezers and maraschino cherry makers. Use for topping pound cake or unfrostcd an gelfood cake. Prepare a package of in itant vanilla pudding mix substituting maraschino cher ry juice for part of the milk. Valentine cherry milk shake will please the chil dren. Simply combine two tablespoons maraschino cher ry juice with 1 cup milk. Chill thoroughly or beat in some vanilla ice cream. Generations of children have spent hsppy hour? pertilting on what those tarts murt have looked like and tasted like. This is our version: Tor two dozen 24 inch tarts. Baked tart shells 5 egg yolks 1 cup sugar i cup sifted all-purpose flour 2 cups boiling milk 1 tablespoon butter 1 tablerpoon vanilla i cup ground filberts 1 j teaspoon grated lemon rind 1 teaspoon salt 2 cups red maraschino cherries, quartered Tart Shells. Prepare tart Ihells like this, use a pic crust mix or buy them ready- made at the bakeshop. Sift , together 1 cup sifted a"-pur-pore flour, two tablespoons sugar and one-quarter tea- i spoon salt. Using pastr. blend-1 er or two forks, cut in one-1 third cup soft butter or mar- j garine until mixture resem-1 bles coarse meal. Gradually j add three to four tablespoons ice water, mixing quickly : with a fork until mixture forms a soft dough. Shape 1 dough into a ball and chill 30 i minutes. Roll out one-quarter i inch thick on lightly floured board or cloth. Using 24 j heart-shaped tart pans or bot- i toms of muffin tins, arrange pastry pressing firmly against j sides of pans. Prick pastry j with fork in several places along bottom and sides. If tart I pans are used, fill each one i with dried beans or raw rice to prevent shrinkage. Place pans on a cookie sheet and bake in hot oven, 425 degrees, 12 to 15 minutes or until i lightly browned. Dump beans i or rice if used. Cool shells. Filbert Custard Filling. We'll tell you now that two tablespoons of Kirsch if you have any handy, will add in terest to this. Beat egg yolks until frothy; gradually add sugar and continue beating until very thick and pale yel low. Beat in Jlour. Gradually add boiling . milk, beating constantly until smooth and well blended. Place over boil ing water and cook, stirring constantly, until thickened and smooth. Remove from heal; add butter, anilla, (kirsch if you like), fil'-erts, lemon rind and sail; cool. Pour into tart shells. Arrange quartered maraschino cher ries over lop of custard. Brush with Currant Glaze. Chill be fore serving. Currant Glaze: Combine one-third cup currant jelly, iwo tablespoons sugar and tablespoon lemon juice in a small saucepan. Cook over over medium heat, stirring constantly,' for about five minutes or until thick enough to coat a metal spoon. While glaze is warm, brush over maraschino cherries. ! Curry Butler This curry butter is for ' serving in bufler warmers, i small paper cups, china or 1 glass cups, one to each person, i for dunking chunks of seafood ! or chicken. Melt two table spoons butter and blend in one-fourth teaspoon curry powder. Try this on whole kernel corn, too. Valentine Party Stuff Entertaining at this season is likely to center on hearts and flowers and red and white color schemes. Give the family a festive time with menu and atmosphere a little more interesting and colorful than usual. The children will love it.
