MEDFORD, OREGON Feeding the Family By ZOLA VINCENT Food Editor ChHH Pumpkins Now and throughout the Autumn leaion, pumpkin shapes are an attractive des sert or party buffet motif. Make them any size according to need. Make several small ones or double, treble or otherwise increase these in gredients. To make "pumpkins" of cheese, let one-fourth pound shredded cheddar cheese sof ten at room temperature: blend thoroughly with one three-ounce packace cream cheese. When well blended, form into small pumpkin shaped bags and indent sides with fork tine to resemble pumpkin. Place small cheese pumpkins on flat dish; center a clove atop each one and chill until firm. You might like to serve these with un peeled red apple slices cut in crescents. Spiced Cider For teen-age or grownup hospitality at this season, hot spiced cider is a happy offer ing along with assorted dough nuts. Recipe makes eight serv ings uBlng two quarts cider. Combine three-fourths cup light brown sugar, one-fourth teaspoon salt, three-fourths teaspoon ground cloves, one teaspoon allspice, one tea spoon cinnamon and one-half teaspoon nutmeg; add to two quarts cider and simmer gent ly for 10 minutes. Strain through double thicknesses of cheesecloth that has been wrung out of hot water. Re heat and serve cider, steaming hot. To Rout Duckling Duckling is a delightful change from other poultry, type meat. So easy to do. No basting. Just place bird in shallow pan, breast side down. Four to five pound duckling takes about 2 to Vi hours at 323 degrees. When duckling is about two-thirds done, turn breast side up and continue roasting till thigh joint moves easily up and down. 1 Best duckling is cooked a crispy, golden brown. ' To achieve crisp skin, place bird under broiler seven inches from heat for 10 minutes or until skin is nicely browned. Applesauce is considered the perfect accompaniment for duckling. Oysters Declared Seafood of Month Wonderfully good, raw or stewed, baker or fried, oysters are especially popular at this season of the year. Shucked oysters are generally sold by I me pint or quart In metal con tainers or waxed cartons which should be refrigerated at all possible times. Frozen oysters should be thawed Im mediately before using. Avail able abundantly, they've been declared "Seafood of the Month". Oyittr stew Traditional, satisfying ovs ter stew is easily made like this. Drain one quart oysters and reserve liquid. Melt four tablespoons butter or margar ine, add drained oysters and cook three minutes or until the edges curl. Combine oys ter liquid with one quart of milk (many oyster fanciers prefer half and half). Add salt and pepper to taste. Heat but do not let come to a boil. Add oysters and serve al once. Sprinkle Willi paprika and chopped chives. Six servings. Imperial Grapes Plentiful grapes are a fine dessert fruit as well as for nibbling any time but for something really super, try this: Wash and stem Hi pounds or so seedless grapes. Com bine one-half cup dairy sour cream and two tablespoons brown sugar and refrigerate for an hour or so. Toss grapes with sour cream mixture until grapes are lightly coated. Spoon Into any special small glasses, dessert dishes or extra fancy cups with saucers; re frigerate until serving time; then serve with any favored cookies. Make Mine Vanilla It takes about 16 months of painstaking curing to develop the flavor of vanilla in the vanilla bean. The orchid from which the bean comes has no aroma at all, nor has the bean Harvest Bounty Lends Drama, Color Fall fruits and vegetables with their vast variety of shapes and colors have been used as dramatic table center pieces and as buffet decora tions for centuries. The sea sonal horn of plenty, however contrived (a woven basket, fruit basket, tray, overturned bowl, hollowed-out pumpkin or one of the bigger squashes) is a fine conversation piece. Many home makers plan dec orations for family fun as well as for more formal en tertaining. The center piece may also be planned to offer dessert, perhaps with a cheese plate. Match or mix fruits and vegetables with autumn leaves, grape leaves or flowers tucked in or used as "bed ding". You might make a "swag" of fresh cranberries. Fall fruits for ultimate de molishmcnt of the display and certain enjoyment include persimmons, pomegranates, nibler, Tokay and Muscat grapes, Delicious and Jon- ainan apples, avocados, oran ges, papaya; and then some lemons for looks. A cheese assortment is perfect accom paniment. Fall vegetables ideal for table decor and ultimate cooking-eating include any of the squashes, small pumpkins, green Bell peppers, red on ions, turnips. Halloween Handout It Is. better to be prepared than sorry. For young hold ups skittering here and there, consider apples, oranges, marshmallnws, popcorn, Jelly beans, the little boxes of rais ins, donuts, cookies, nuts and other appropriate edibles. Stores offer special packages. If you have these in mind, buy them early because they'll ail be gone early. You'll probably want sand wich bags, transparent plastic wrap, waxed paper, aluminum foil and other "handout" wrappings. Appropriate naner napkins, plates and paper cups add to festivity for fam ily tun as well as for parties and for collectors of loot. Tuesday Story Hour Started By Library The Children's department of the Public Library of Med ford and Jackson county will present lis first pro-school story hour of the season Tues day,. Division Chairmen To Meet Mondays Division chairmen of the United Crusade drive will meet with thctr assistant chairmen at the Mcdford Ho tel coffee shop Monday, Oct. 29, at noon. Oct. 22 was the last formal report meeting. From now until the campaign goal has been reached chairmen will meet al these noon sessions. Also Monday will be the Home Crusade kickoff and training session at 9:30 a.m. at the Red Cross chapter house. All block workers, captains, and colonels will attend. Invitations Sent The conference will be at tended by agricultural econ omists and home economists from state extension services and land grant colleges, along with representatives of farm organizations and businesses College Postpones Homecoming Event Homecoming week end at George Fox college, Ncwbcr.2, for many years held near Nov. 1, is announced for two weeks later this one year, according to Lonny Fendall, director of student activities. Now slated for Friday and Saturday, Nov. 16 and 17, this year's program will feature the dedication of Minthorn hall at 4 p.m. on Saturday. A combination of the wreckage of the recent storm and delay on furnishings for the new education center have caused the, postponement. related to agriculture. Invita tions have been sent to for eign embassies in Washing ton and to the Canadian De partment of Agriculture. The extension service is the department's education arm which helps spread agricul ture economic information throughout the country. Outlook is part of the de partment's economic intelli gence service. Together with crop and livestock reports and market news, outlook pro vides a continuing flow of information on the situation in agriculture and the most probable developments in the future. Outlook is designed primar ily to help farmers do a better job of planning their produc tion and marketing. Business men who sell goods or serv ices to farmers or handle ag ricultural products after they leave the farm rely increas ingly on the outlook service. Consumers who buy the food and fiber that farmers pro duce find that they also need outlook service. The depart ment said outlook is an aid which helps consumers to buy more effectively. Series of Reports The outlook service is car ried on at both national and state levels. The national ma terial is developed here by economists and statisticians. This information is released throughout the year in a se ries of regularly published "situation" reports. Outlook programs in the state are car ried on by the extension serv ice in the land grant colleges and universities who use lha national material for background.
