Feeding the Family By ZOLA VINCENT Food Editor Brussels Sprouts In Abundance From the tropical splendor of Jamaica to the beauty of cypress-framed coast of Cali fornia at Carmel-by-the-sea is but a one-stop hop for food re porters nowadays. California takes proper pride in its crop of Brussels sprouts, -aristocratic kin of the' cabbage. They are marketcu- fresh now and throughout the winter months. Commercial produc tion is centered largely south from San Francisco for 100 miles along the (occasionally) fog-bound coast. Carmel appears to be an Old Monterey pueblo of the quaintest design where cob blestone streets lead down to a bone-while beach and the blue Pacific. Here, as in other parts of the world, foods available locally and sophisti cated tastes get together At Carmel, a sea town set at the edge of fertile coastal valleys, we found anrl photo graphed a combination of lo cal lobsters (properly called crayfish), rosy shrimp (prop erly, prawns) and delicate green Brussels sprouts which somewhat resemble baby roses. These easily obtainable foods are the principal ingre dients for two dishes for which we offer recipes today. Sprouts and Lobster In Sherried Sauce Equally popular fresh Brus sels sprouts or frozen Brus sels sprouts may be used; en tirely a matter of personal preference and convenience. Lobster meat may be canned or cooked, fresh or frozen. I Add seasonings, sherry, mush rooms, pimicntos and cheese. Carefully combine with Brus sels sprouts and lobster. Sprouts and Shrimp Curried Specially Here again you may use one pound fresh Brussels sprouts or two 10-ounce pack ages frozen Brussels sprouts. They are combined with l'z pounds cooked, peeled and devemed shrimp for six gen erous servings. 2 tablespoons butter 2 tablespoons all-purpose flour 1 cup light cream lii teaspoon salt 1 1 cup dry white wine l-4 cup dry sherry teaspoon curry powder Va pound sliced cooked mushrooms 1 pound fresh Brussels sprouts or two 10-ounce packages frozen sprouts l1 pounds cooked, peeled and devcined shrimp Cook fresh Brussels sprouts, covered, in one inch boiling water 10-15 minutes or until just tender; drain. Or cook frozen Brussels sprouts ac cording to package directions; draining if necessary. Melt butter; stir in flour I until smooth. Gradually add j cream, stirring constantly un- til thickened. Stir in salt, wine, sherry, curry powder and mushrooms. Combine gently with Brussels sprouts I and shrimp. Heal to serving temperature, stirring gently, j Orange-Sweets Sweet potatoes are increas- j ing in markets right along. This will remind you of a long-time favorite that may 1 have eluded your memory. Simply mash boiled sweet potatoes as usual and season with one-quarter cup or so of orange juice along with the butter or margarine and a little salt. For special oeca-j sions, pile fluffy sweet potato j into orange shells left from the morning's juicing. Top with bits of marshmallow and put under broiler until marsh- i mallow bits are lightly ( browned 1 Herbed Dressing When you serve tossed to mato and green pepper salad, add crumbled whole oregauo leaves to taste to the Kronen ; dressing Add and toss light ly. Wash, dry and grease thctn if you like the skin soft. Into a 400 degree oven fur 40 to fifl minutes, dependent on size. Remove and knead them gently with your hands. OREGON Journey To Oregon election day, according to the politicians who have been .sampling public attitudes. A light vote, the Democrats fear, would decidedly aid the Republicans, who more often than not do better in getting down to the polling place. A registration edge quickly di minishes under these circum stances. President Kennedy is in heavy demand as a personal stimulant for the fall cam pa i g n s of the Democrats throughout the North, if not in Mississippi and other Southern states where one party conditions make his ef forts pointless in any event. Anxious to Oblige The president is anxious to oblige congressional Democra tic candidates becai se the fate of his legislative program next year will depend on the make-up of the newly elected Congress, especially the House of Representatives, where his margin of supporters on the most touchy issues such as medicare has been virtually non-existent. Kennedy isn't such a de running him for national of fice. More recently, the nightly seminars conducted by Jack Paar were, at the time of their suspension, operating as a sort of govcrnment-in-exile. And the pungent commentaries of Mort Sahl have given him the status of a rump parlia ment. Two things lead me to be lieve that Shelley Berman is now on the brink of making the transition from jester to philosopher. One is that he turned up last Sunday as the guest or- on measures which affect the entire fiscal picture, he added. - Pre-scssion legislative con ferences have been held in the past, but this is the first time all 30 senators and 60 repre sentatives are being formally invited to attend. After the November elec tion, Senate President Harry Boivin (D-Klamalh Falls) and House Speaker Robert Dun can (D-Medford) will appoint a special "interim committee on revenues and expendi tures," composed of 25 legis lators. The 25-10 senators and 15 rcprescnalives - will be pros pective members of the taxa tion and ways and means com mittees in the regular session. Life span of the special in terim committee will be brief limited to the three-day con ference. This group, with the fiscal committee, will spearhead the conference. Various slate agencies will make reports, including the tax commission and the de partment of finance and ad ministration. He has always been a most prag matic politician himself, in his days as a Massachusetts congressman and senator as well as today as chief execu tive. Better than some past presidents who lacked con gressional experience, he un derstands the pressures from the home state which often di lute a congressman's will to back the president's program. All four Oregon Democrats in Congress opposed Kenne dy's communication satellite bill on grounds that it amounted to a giveaway to private industry. The presi dent and his political advisors undoubtedly recognized that these four Democrats - Sen. Wayne Morse, Sen. Maurinc Neuberger. Rep. Al Ullman and Rep. Edith Green - arc all sitting in Congress today largely because of the success of a similar stand against re source policies of the Eisen hower administration. aele on the television pro gram "Y o u t h Wants to Know." The other is that he showed up at a party here the next evening wearing a vest. Both are recogniied sym bols of omnipotence. The typical guest on "Youth Wants to Know" ii a deputy assistant lecretary of state whose sphere of in fluence embraces Pago Pago and surrounding lidelands. A vest usually is worn as a backdrop for a Phi Beta Kappa key, or some other aca demic ornament, such as an elk's tooth. Berman, however, denies that there is anything signifi cant in these occurrences. At the aforementioned par ty, celebrating his installation as visiting lecturer at a local lyceum called the "Blue Room," I questioned Berman closely about one of his state ments on "Youth Wants To Know. ' It was something about "making life a better place in which to live." To me, it had the ring of profundity. But Berman said it actually was a slip of the tongue. He explained that he meant to say "making life a better place in which to earth." As for the vest, Berman said he had always been fond of weskils but hereto fore had been unable to af ford them. He said they helped keep his navel warm. Despite such disclaimers, the feeling persisted that Ber man's rise as a comedian is on the verge of culminating the development of full blown political and social consciousness. The political trend was apparent in the way he de plored the refusal of New York registrars to let him vote until he takes a literacy test. "I talked to them In my best language and offered to read passages from Playboy magazine, but they insisted this was not proof of literacy," he said. His blossoming sociological awareness was exhibited in the concern he showed for a young woman who had some how been seated off away from the other guests at the party. What matters even more to him is that these four Demo crats all support the bills he very much wants to gel enact ed in the next Congress - me dicare, federal aid for schools, tax reforms, elc. Kennedy wants them in that Congress when the issues come up for votes - and he wants more Democrats to vote with them, which is why he can be ex pected to plug for Robert Duncan and Blaine Whipple, the Democratic contenders for scats held in this Congress by Oregon's only two Republi cans in Congress. or the best J8ysi- Sj. In re cent weeks Morse has been praising the president pro fusely, notably on the hand ling of the Mississippi inci dent and on the trade bill and the promise of help for the lumber industry. He voted against the foreign aid bill but didn't denounce the bill with fiery disdain. Speculation Provoked Morse announced several weeks ago that a S20 million federal project was being con sidered for the Baker area.
