MEDFOHD, OREGON A GREAT STORE IN A GREAT COUNTRY All spring long our good friend, Marie Bosworth, ha been urging Potpourri to write something about all the ed ible plants that grow abundantly in Jarkson county. So, when she discovered that Photographer Bob and Naturalist Odd Bjcrke had collaborated on a page of pictures about such plants, she offered her list. Some of these natural food plants were known to Mn. B. because she was reared in this county, and learned about, them from family and friends, and others vere noted in the writings of botanists and naturalists. The Bosworths live on a farm on the Appicgate river, and all these plants are to be founds on the farm. She lists as salad plants malva, filarce, miner's lettuce, watercress, sorrel, dandelions, chicory and mint. Plants which may be cooked - often called "pot greens" are lamb's i quarters and pig-weed, and of course, many cook dandelion leaves. Mrs. Bosworth also makes a tea from the tender tips of wild blackberry plants, mint and strawberry-using the leaves about 5, 5 and 1 proportions. She flavors this drink with honey. Malva has a geranium-like leaf and is called chcf.se weed. It has a mild flavor. Kilareo, which looks like a tiny fern, she says is "delicious" in salads. Miner's lettuce, which many enjoy, is succulent and has a sharp flavor. Watercress, which grows in running water, has a peppery flavor and is considered by many to be a delicacy. It is lioth a salad plant and a pot herb. Sorrel leaves are tart, and dandelions, which have a dis- linctive flavor, are better if the leaves are picked before the plant flowers. Many cook dandelion with bacon or pork pieces. Chicory has a flavor which resembles endive, widely used as a salad green. This also should he used when the plant is small. Later the plants have brilliant blue flowers which are. gorgeous. This is Mrs. B's list - probably others would be able to add to it. Photographer Bob, Potpourri, Marie and FB had a fine friendly argument about pig-weed and lamb's quarters. Two said this is it - the other two said no, you have the plants mixed up. And guess what - our book "Handbook of North west Flowering Plants" by Helen Gilkey, says they are vari ations of the same plant. Mrs. B. said, "Please find another name for pig-weed-it sounds so terrible." Well, here is the chenopodiaceae. We'll just go on calling it pig-weed. An other common name for the same plant is goose-foot. Last week we read - somewhere or the olher - that Premier Khrushchev enjoys going in the water at I he Rus sian resorts and seashore spots, but that he cannot swim. So he goes in anyway, but wears water wings. Potpourri read this twice, and then again and suddenly we laughed and laughed.
