Pink in High Fashion
For Valentine's Day
Love that pink! Pink may
be high fashion today but it
has been a mid-February
favorite ever since St. Valen
tine was invented. The ro
mantic saint, seems to have
had a passion for red and
while and all variants thereof.
So we've been busy in the
kitchen stirring up frivolous
fancies in the pink of perfec
tion for pleasing your , own
true love(s).
"Be My Angel" Cake
: Pink makes the ideal back
ground for silhouette hearts
cut out of semi-sweet choco
lote for striking color and
flavor contrast. It's simple
when you bake an angle cake
using a quick mix or buy it
at the baker's. The secret of
the chocolate hearts is to use
the same little morsels of
chocolate that make America's
favorite Toll House Cookies.
Frost an angel cake with
pink -tinted Seven Minute
Frosting. Place five large
tchocolate ihearts on top of
cake and 14 small chocolate
hearts around sides. .
'Seven Minute Frosting. We
repeat this, though it is like
ly you've made it a hundred
times. Combine two egg
whites, unbeaten, with l'
cups sugar, dash of salt, one
half cup water and two tea
spoons light corn syrup in
top of double boiler. Beat
about one minute or until
thoroughly mixed. Place over
boiling water and beat con
stantly with sturdy egg beater
or at high speed of electric
beater seven minutes or until
frosting stands in stiff peaks.
Stir frosting from bottom and
sides of pan occasionally with
rubber scraper, spatula or
spoon. Remove from' boiling
water. For a very smooth and
satiny frosting, pour at once
into a large bowl for final
beating. Then add one tea
spoon vanilla and beat 1 min
,ute or until thick' enough to
spread.
"Chocolate Hearts. Com
bine one six-ounce package
(one cup) semi-sweet choco
late morsels and two table
spoons vegetable shortening
in top of double boiler; melt
over hot (not boiling) water.
Spread evenly with back of
spoon on aluminum foil-lined
15x10x2 inch pan. Chill until
firm, approximately 20 min-
: utes. Invert carefully on wax
Zed paper-lined cookie sheet
Gently peel off foil. Using
heart shaped cookie cutter,
. two inches across at widest
point, cut 22 hearts. Using-
heart-shaped cookie cutter 2's
inches across at widest point,
cut five hearts. Rechill until
; firm enough to handle, ap
proximately five minutes. If
you haven't heart shaped cut
ters, now is a good time to
get them. ' '
Pink Peppermint Punch
Punch is the prettiest cup
ever quaffed to Saint Valen
tine yet it is made in a mat
ter of minutes with satin-
smooth, blendable, convenient
evaporated milk. Recipe
makes 18 half-cup (punch cup)
servings: '--
Combine two tall cans (one-
and two - thirds cups ach)
evaporated milk, two tea
spoons peppermint extract
and a careful bit of red food
coloring: chill well. You'll
need a quart of vanilla ice!
cream. Just before serving,
stir in gently, one 12-ouncc
bottle chilled ginger ale and
two scoops vanilla ice cream
until ice cream is melted.
Place a scoop of ice cream in
each punch cup and add pep
permint punch to fill.
Cherry Bavarian
All pink and pretty, this
Cherry Bavarian is a dessert
delight to make, to look at,
to enjoy. Unflavored gelatine
gives full sway to. the flavor
of the sour red pitted cherries
enhance with evaporated milk,
a bit of almond extract, a
mere touch, of red food color
ing. .J
Drain one can (one pound
13 ounces) sour red pitted
cherries (packed in water).
Measure liquid, adding water
if necessary to make one cup.
Mix together one envelope
unflavored gelatine and one
third cup sugar in a saucepan;
stir in cherry liquid. Place
over low heat, stirring con
stantly until gelatine and
sugar are dissolved.
Remove from heat; cool
slightly, then stir in one-half
cup of diluted evaporated
milk and one teaspoon almond
extract. Chill until mixture
is slightly thicker than un
beaten egg white.
Meanwhile, chill two-third
cup evaporated milk in freez
er tray of refrigerator until
ice crystals form around
edges. Turn into chilled bowl
and whip with rotary beater
or high speed of electric mix
er until milk is stiff. Stir
cherries into gelatine mixture,
then fold into evaporated
milk. Add a few drops of red
food coloring. Turn into eight
inch square pan and chill un
til firm. .
To serve, unmold and gar
nish with eight small choco
late hearts made as suggested
for "Be My Angel" cake in
these columns.
Maraschino Cherries'
Have Valentine Lure
The lure of the maraschino
cherry bottle is almost as
great as that of the box of
chocolates out of the chil-
dren's reach. They are a nat
ural for Valentine use and
decoration. '
Bright red. almond-flavor
ed maraschino cherries are be
loved not only of youngsters
but also of ice cream manu
facturers, sundae sauce mak
ers, bakers and chocolate
tine dessert choice will cornel
from ice cream cabinet or
bakeshop.
Decorate almost any des
sert, fruit or chilled beverage
with a maraschino cherry or
two.
Put them in salads, froz
en desserts, fruit compotes,
sherbets and ice cream.
Use them for topping
pies, cakes, custards, iced
drinks, breads, cookies, sauces,
home made candies, frostings,
jams and preserves.
Valentine Party
Fun for Family
Why shouldn't the ever lov
ing family have fun on Valen
tine's Day? Let the youngsters
scatter their Valentine collec
tions about the table or use
as centerpiece among some
bright red paper hearts, cupids
or other love motifs assem
bled by a thoughtful mother
or older sister.
Appropriate paper nap
kins and place mats or doilies
are fun. -
