the frozen food cabinets of
all major markets, ready for
boiling or broiling in a very
few minutes.
Here we serve this-delicacy
chilled with appropriate ac
companiments. Six servings,
6 South African rock
lobster tails
cup mayonnaise
Vi cup minced chives or
green onion tops
2 chilled cucumbers
6 chilled tomatoes
Watercress
piece. Hub with damp cloth.
If a tenderloin is used, use
a long narrow knife to make
an incision lengthwise
through the center of the ten
derloin being careful not to
cut through. If round steak is
used, make incisions over dif
ferent parts of the meat so
that each serving will contain
one stab.
Combine vinegar, salt and
pepper. Pour over steak and
into incisions. Combine olives,
green pepper, capers and ham.
Stuff this mixture into all in
cisions. Cover meat with slic
ed onion and green pepper,
parsley, tomato paste and one
tablespoon vinegar. Let stand
half an hour.
Heat salad oil in deep skil
let. Remove meat from mar
inade and brown on all sides
in the hot oil. When meat is
well browned, add vegetable
marinade and water; simmer
15 minutes. Serve terderloin
rosy red inside. Round steak
should be covered and sim
mered until meat is tender,
adding more water if neces
sary. .
Just before serving, add
the red wine; simmer five
minutes. Serve the sliced meat
on a hot platter so the stuffing
shows. Garnish with water
cress. Serve the remaining
sauce in sauceboat. W 1 1 h

Portland Zoo Gets
Black Australia Swans
Portland - IUPD - The city
of Portland has received a
pair of black Australian
swans from a Tacoma resi
dent. City Commissioner Ormond
R. Bean said the birds were
a gift of E. A. Kline. Bean
said Kline had two pairs of
the swans, but decided to part
with one pair because the
four battled all the time.
Bean said the swans, valu
ed at $300, will be on view
at the Portland zoo.

Buying Guide for
Outdoor Meat Cookery
Here is a buying guide for
meat for outdoor cooking:
Chicken. 1 to 2Vi pound
broilers; one-half broiler per
person. It is easier to handle
If broiler is cut in half, the
backbone removed and the
neck cut off.
Cut-Up Turkey. Four to six
pounders serve five to six per
sons.
Steaks. 1V4 to 2V4 inches
thick. Sirloin, porterhouse and
tenderloin cuts are best.
Three-fourths to one pound
per person.
Flank steaks or boneless
chuck for kabobs, one-half
pound per person.
Ground beef. One half
pound per person.

Lobster Superb Eating
Ever since the first trial
shipment of South African
rock lobster, a growing Amer
ican public has demanded
Follow easy package direc
tions which read like this:
Drop frozen South African
lobster tails into boiling
salted water. When water re
boils, cook three minutes
longer than individual weight
in ounces (for example, cook
five-ounce tails eight minutes).
Drain immediately and
drench with cold water. With
scissors, cut thin underside
membrane along each edge
close to shell and remove
membrane. Ger.tly remove
meat from shells in one p'ece.
Chill whole tails, ix may
onnaise with three tablespoons
chives or finely chopped on
ion tops. Place in bowl and
put bowl in center of big chop
plate or platter.
Partially pare cucumbers
ice. Slice tomatoes. Arrange
rock lobster t-ils around
bowl of dressing and surround
with sliced cucumbers and
tomatoes. Sprinkle dressing
with remaining chives and
garnish platter with watercress.
Serve with toasted French
bread and iced coffee or other
beverage.

aromatic bitters mixed into
a cup of tartar sauce, Hol
londaise sauce, lemon-butter
sauce, mayonnaise or bottled
cocktail sauce will give
shrimp, oysters, crabmeat or
lobster, a delightfully differ
