Sliced processed cheese Biscuit mix This dish, as we said, is pre pared upside down so it is turned ver when taken from the oven. Slice one unpeeled lemon into five or six slices according to number of serv ings planned. Place lemon slices in bottom of a greased eight-inch baking dish. Com bine tuna, onion, bread crumbs, seasonings and well beaten egg, blending lightly but well. Press tuna mixture over lemon slices; then cover with a layer of sliced Cheddar cheese. Make a dough of one cup of biscuit mix or use your favorite biscuit recipe with one cup of flour. Spread over cheese layer and bake in hot oven, 400 degrees, for about 15 minutes or until light brown. Turn upside down and cut into pie-shaped pieces. Serve while hot, plain or with a cream sauce. For a fancy cream sauce, add some chop-ped-up pimientos. Orange-Mint Cream For a superlative dessert, combine two cups bite-size orange chunks, one-half cup pepper m i n t stick candy, crushed, and one - half cup chopped pecans. Whip one cup whipping cream; add orange-candy-pecan mixture. Serve in tall sherbet glasses. Six serv ings. You might like to add a few miniature marshmal lows to this. Sauce Pork Roasi With Pineapple The pork shoulder butt, an excellent piece meat for roast ing, is very reasonable in cost; reacts especially well to a fruity coating during cooking period. 4 to 5 pounds pork shoulder butt 3 tablespoons brown sugar Y2 teaspoon salt V4 cup vinegar V4 V2 1 cup water cup catsup can (8 ounces) crushed pineapple 1 tablespoon soy sauce Place roast, fat side up, on a rack in a shallow roasting pan. Roast, uncovered, in a 325 degree oven, 45 to 50 minutes per pound. Mean while, combine sugar and salt and stir in vinegar, water, cat sup, pineapple and soy sauce. Cook five minutes, stirring constantly. About an hour before end of roasting time, pour the sauce over the meat and baste every 20 minutes by spooning the sauce from bottom of the pan. Skim fat from the sauce remaining in pan and serve sauce with cooked meat. Hope for some left over for tomor row.
