Executor Farrell lackhuret Attorney lor Executor Corned Beef Brisket Is Fine Flavored Piece O' Meat Here's a fine flavored piece of meat if we've ever sampled one. We're not sure which came first Jiggs and Maggie or corned beef and cabbage but it is pretty well estab lished that County Cork doesn't claim it. We acknowl edge our indebtedness to Jiggs for Americanizing this sweet-tasting dish. . There's a great difference in the quality of corned beef due to the quality of the meat and the method of curing. Good quality corned beef brisket will have about one quarter as much fat as lean. Cover corned beef with water and simmer until ten der (three pounds about three hours). Do not boil. This may be served hot or cold; with horseradish or mustard. A party meat with leftovers for sandwiches. Special Glaze: Remove the hot simmered corned beef brisket from the broth. Cut the fat covering the brisket into diagonal strips, then into diamond shapes. Spread light ly with prepared mustard. Sprinkle lightly with sifted brown sugar. Stick a whole clove into the center of each diamond. Place the brisket in a shallow pan. Bake in a hot oven, 400 degrees, about 20 minutes to melt the sugar and glaze the surface of the bris ket. Place on hot platter. Slice and serve as suggested above, with horseradish and or mustard sauce. Hamburger Fillings Give popular hamburger a new lift and look in ways like these: Between two twin patties, place some grated cheese seasoned with chili sauce or catsup and a thin slice of onion; pinch edges and broil or grill as usual. Serve creamed hamburger over rice, hot biscuits, toast, boiled or baked potato ... or sweet potato! Simply brown hamburger, stirring as it cooks; sprinkle with flour, salt, pepper and some minced onion. Add milk a little at a time until desired consistency is reached, stirring and cook ing slowly. Fish Fillets in Spanish Rice The Lenten season is tra ditionally one during which fish and shellfish are featured prominently in menu plan ning of many families. Many west coasters like their fish and shellfish with a Spanish flair, like this: For six servings, take two pounds of fresh or frozen fish fillets of your choice. Cut fil lets into serving-size portions; place in a single layer in a well-greased baking pan. Cook one-fourth cup onion and one fourth cup chopped green pepper in three tablespoons butter or other fat until ten der. Blend in two tablespoons flour; add two cups canned tomatoes, one teaspoon salt, one-half teaspoon sugar, dash of pepper, one whole bay leaf and one clove and cook until thick, stirring constantly. Re move bay leaf and clove. Cover fish with sauce. Bake in moderate oven, 350 de grees, 25 to 30 minutes or until fish flakes easily. Peanut Butter Cookies Favored By Scouts Girl Scout Week and Pea nut Week appear simultan eously on our calendars. We know that peanut butter is the favorite food of Boy Scouts so we will assume that it is also popular with the fe male of the species. One thing certain and that is that a Girl Scout will be mighty popular with a Boy Scout when she offers him these cookies. Father is likely to like them too, you know. A quick and easy recipe; done with a biscuit mix. For variation, garnish with peanut halves before baking or dent with thumb and fill dent with chocolate shot. 1 cup peanut butter V2 cup granulated sugar Vi. cup brown sugar Vz cup boiling water 2 cups biscuit mix Combine peanut butter, the two sugars and water and beat until smooth; stir in biscuit mix. Drop by teaspoonfuls onto lightly oiled cooky sheet; flatten with fork tines dipped in flour. Bake 8 to 10 minutes in moderately hot oven, 400 degrees. Offer with a pitcher of milk alongside generous mugs or tall glasses. Fish, Eggs, Macaroni Products Items on Lenten Menus The forty days of Lent, now well under way, put menu emphasis on high protein pro ducts that serve as a substi tute for meat. It is no hard ship when one lives in an area rich in products of the sea, rich in dairy products, rich in poultry and eggs. Fish and Shellfish. Plenty of west coast-caught fish and shellfish at reasonable cost. Fish pan -readies for quick cook ing include mackerel, kingfish, smelts, good variety in fillets, and popular fish sticks. Fish steak and baking varieties easy on the budget include ling cod, swordfish, salmon and halibut. Moderate prices mark eastern and west ern oysters and scallops. South African lobster tails are readily available in the frozen fish cabinet. There's Dungeness crab and Mexican shrimp. Bargain priced tuna and sardines are pantry shelf items for frequent use. Plen ty of lemons on hand! Eggs and Poultry. Prices seasonally low. Watch for ads, displays. Macaroni Products. One could have a different maca roni product each day in the month. Macaroni, spaghetti and egg noodles come in vast variety of shapes and sizes, combine ideally with eggs and cheese. This is one place you can really taste shape. Dairy Products. An abun dance of Cheddar cheese for the making of fine fondues, rarebits, macaroni and cheese, au gratin dishes galore. Serve plentiful, versatile, satisfying and nutritious cottage cheese often. Use "as is" or combine with fresh vegetables, canned and fresh fruits. Children love it drizzled with honey. Vegetable Bins. Vegetable plates are popular Lenten fare. Plentiful vegetables for cooking include green and red cabbage, carrots, celery, onions, potatoes, cauliflower, squash varieties, spinach and other greens. Crisp relish and salad items include carrots, celery, onions, radishes, cauli flower, tomatoes. New aspar agus! New rhubarb! Fruit Displ ays. March standbys: avocados, bananas, apples, grapefruit, oranges, some winter peas; Emperor grapes. Plenty of lemons on hand for fish and shellfish. Other Plentifuls.
