What you get tastes liljjvanilla and probably ansvs all the pur poses of vaia, but the chances are iut 500 to 1 that the ice cnp you are eat ing is not flared with va nilla. About the me condition exists in mosther foods, too. Vanilla coofc for one. Chances are jtty slim that there is a gle drop of vanilla in a X)le carload of them. The cy vanilla ice cream or coofe you will eat will be the memade vari ety. And the repn there is no vanilla in thtfiings you buy is that there st isn't enough real vanilla 1go around and besides it's tqexpensive. Created an Ialion So the cijiists went to work and bjheir combined efforts creaf a chemical, that, with feer additives, tastes and sells like real vanilla. Usuaj the imitation vanilla, whicisn't vanilla at all, is callecVanillin. It is mostly deri-d from wood pulp and cojtar. But it is cheap and wai doctored up tastes like tljreal article. Genuine villa comes from a vine, nativfo Mexico, Cen tral Americaind some other warm countis. It belongs to the orchid ftiily of plants, After the blaom falls away, long, slendejpods form on the vine. Tjse pods, after curing and jocessing, yield pure vanillaxtract. A five-yea)ld vanilla vine, which may Jmber up 50 or more feet im tree or on a building, yies as many as 50 pods. Just ifore the pods ripen they e gathered and put in the srle. After drying the pods 4 snmy black, sprinkled . erously with tiny crystal) After thepods are thor oughly dryaey are steeped in oil and i resultant aro matic oil iivanilla extract, the deliciouj flavoring once used in horlnade ice cream and other refections. It has a bland, plisant taste, with a clinging firor that remains in the mouf long after the ! food is swalwed. Label Will fell Many howswives today de mand and c usually get pure vanilla exact from tneir food store, hey can also buy the chemicj that tastes and smells like.anilla, which is much cheajf and is of course an imitatirj You carl tell which is with by reading the fine print j the label. The ancient Aztecs of cen tral and South America must have had taste buds similar to ours today, for evidence has been uncovered that indicates these ancient people used and were very fond of vanilla. But of course when the Aztec housewife asked for "vanilla" she got vanilla, not an imita tion. The marvels of chemis try had not created a synthet ic that tasted like vanilla. So today if you say "I'll take va nilla," you probably will get a substitute that tastes like vanilla but is about as far away from genuine vanilla as the ancient Aztecs were from a drug store.
