It is estimated that there is 12 per cent more pork on the market now than average and that means lower prices. Pork has been an important food item since early times. The Egyptians were raising hogs for food back in 3400 B.C. and it is recorded that the Chinese thought highly of pork dishes in 2900 B.C. Early American hogs were largely free - roving razor backs; vastly different from today's meat type breeds which are concentrated in the Midwest on farms that also grown large amounts of grain. In all pork cookery, low temperature isimportant. Usually pork is roasted, pan broiled, fried, braised or cook ed in water. Roasting is best for large tender cuts. Broil ing and pan-broiling are most suitable . for cured cuts of pork. Zippy Lemon Chops 6 pork chops, 3A inch thick 13 cup brown sugar 1 teaspoon salt V teaspoon pepper 2 tablespoons lemon juice 13 cup chili sauce 6 onion slices 6 lemon slices Lay the pork chops in bak ing dish. Combine brown su gar, salt, pepper, lemon juice and chili sauce. Place onion slice, then lemon slice on chops. Put tablespoon sauce over each chop; cover baking dish with close-fitting lid or foil. Bake in moderate, 350 degree oven, IVi to 2 hours. Six. servings. Maybe candied yams and coleslaw? Pork Chops With Orange Slices Here we cook pork chops in a savory sauce, then dust orange slices with powdered sugar and fry them quickly as a garnish for the chops. Six servings. 6 thick pork chops 2 tablespoons soy sauce ii teaspoon dry mustard 1 teaspoon ginger 1 teaspoon salt 1 tablespoon brown sugar 3 California oranges, peel ed and sliced Vs cup powdered sugar Wipe pork chops with damp cloth; trim off excess fat. Fry out fat in skillet Combine soy sauce, mustard, ginger, salt and brown sugar; rub this into the chops and fry in the fat, browning on both sides. Cover skillet, reducing heat, and steam until meat in ten der. Remove to warm platter. Dust orange slices heavily with powdered sugar and fry quickly in tat remaining skillet; add butter or margar ine if more fat is needed. Serve pork garnished with fried orange slices. Six serv ings for four persons if there s a man or growing boy in the family or company coming. sif irromDaniments Seasonal good things to complement plentiful pork for your menu consideration include lemon-buttered spin ach hot spiced 'beets, orange - and' onion salad, sauerkraut, mashed sweet potatoes or yams, candied yams, cole slaw, apple dumplings, spiced peaches. Waldorf salad, broc coli Hollandaise, stuffed t baked apples. Or perhaps the family would like a molded cran berry salad, Mexican corn 01 ' corn pudding, baked Hub bard or Danish squash with their pork. Corn bread or corn muffins are thought by many to be unsurpassed with pork in any style. VQUI WW Use fresh mushrooms now f their season or canned mushrooms to prepare this substantial dish. - Secret in slice mushrooms, pork. vegetables, paper-thin, pounds lean pork 3 tablespoons butter i Salt and pepper 1 small onion, chopped ' 2 or 3 stalks celery ii frpsh mushrooms, 2 jwu"- sliced or 4 or 8 ounce can sliced mushrooms, aram t ed : Pinch of ginger t-i;V nt niitmez ; 2 tablespoons sherry or chicken Doumun 2 tablespoons soy sauce 'ii4 cups rice, uncooked i cup coarse pretzel crumbs : (optional) i Cut the pork in thin slices and then cut the slices into ;thm strips. Melt the butter; add the pork and cook, stir ring occasionally, for 10 min utes. Season with salt and Kfonion in half and slice -each half into a measuring , u-t thin slices). Add CUP uor u- - enough shredded celery to fill mushrooms sliced very thin, ginger and nutmeg and sim mer, stirring often for twenty minutes. Add wine or chicken bouillon and soy sauce and simmer, covered, 10 minutes. Cook rice according to pack age directions as idsal accom paniment. Sprinkle pretzel crumbs or crisp chinese nood les (they come canned) around the rice. Six servings for 4 or 5 hungry people. Combine raisins with apples, lemon juice, water and sugar in a large saucepan. Try these chili-sauced chops topped with lemon slices, oven baked for flavor bonus. 30 minutes. Add orange rind j and spices. Cool to lukewarm: stir in almonds and wine. Let stand until cold and thick be fore serving or seal in hot sterilized jar. Dried fruit and bread crumbs or cooked cereal com bine in a stuffing that dresses up less expensive cuts of meat; especially good with pork. Dried fruits scalloped with meat give new taste, more food value. Plain bread, muffins, cake or cookies become something extra special the minute you add cut-up dried fruit to bat ter or dough. Scissors are fine for cutting-up. Klamath Man Not To Seek Reelection Klamath Falls - (UPD - John Kerbow, Democratic state representative from Klamath county, said Tuesday he would not be a candidate for a third legislative term. Kerbow said he hoped to spearhead a Ken-nedy-for-President campaign in Klamath, county for the primary election. . APPLEGATE VALLEY Smith Named to Board By MAUDE ZIEGLER Applegate Valley - Glenn Smith of Ruch was elected a new member on the board of directors of Grade A Milk Producers of Southern Ore gon at their annual meeting and dinner at Upper Apple gate Grange hall Tuesday. Ed win Hayes, Eagle Point, was reelected secretary-treasurer, and Louis Straube, Applegate, was reelected to the board.. Other officers and members include Floyd Smith, Provolt, president; Paul Sakraida, Pro volt, vice president; and Rob ert Martin, Cave Junction and Donald Green, Eagle Point, board members. Lowell Jay nes, Grants Pass, was retired from the board, having serv ed the maximum 6 year pe riod. Dr. Leo Van Dijk, veterin arian from Central Point, was guest speaker, and talked on dairy farming and agricul ture in the Netherlands, his native country, giving a view of drainage problems. He said if one wishes to make an im pression with Netherlander, he will not refer to Holstein cows as such, but as "Frei sians." Leo Reed from Eugene, rep resenting Gordon Coleman, manager of Meadowland creamery there, spoke on mar ket policies. Other guests in cluded Donald O'Brien, repre senting the First National Bank of Grants Pass; Ervin Patton and Stan Zapell, Med ford, representing the Pro duction Credit association and Earl Josy, county agent. Over 50 persons attended, and din ner was served by the ladies of the Grartge. A number of local women plan to participate in the Jackson county Cowbelle's beef cookery school to be held at Roxy Ann Grange hall on Spring st. Jan. 26 at 1:30 p.m. Beverly Lyons, home eco nomist for California Oregon Power company, will conduct the school. Mayfield, superintendent o f Medford Crater Students af Mock SOC Panel Ashland-Crater High school English students planned to attend a special mock arbitra tion panel at Southern Oregon college today. Dr. Arthur S. Taylor, chair man of the social science di vision, said the panel featured four SOC students: two repre senting the Stereotyper's un ion, and one each for the Oregonian and the Journal, supposedly at the first arbi tration session to solve the current strike. Neil Knudsen, SOC student teacher at Crater High school, will accompany his class on the visitation. His high school supervisor at Central Point is Bill Russell, SOC graduate, and his campus supervisor, Dr. Donald. E. Moore of the social science division. A New Brunswick, N.
