i i Feeding the Family By ZOLA VINCENT Fee4 Slew Chickens for Salads, Main Dishes At tins season when so many chickens are going into chicken salads and chicken casseroles, ve refresh your memory on how to stew a chicken; suggest that you do two or more at a time if you've a freezer handy. Stewing chickens are bar gain priced, easy to cook, re quire long, slow simmering and that means 2V4 to 4 hours Never underestimate the time it takes to stew a chicken. Place a whole or cut-up chicken in a kettle with a tight lid. 'Add one-half cup water and one-half to three-quarter teaspoon salt for each pound. Quantity of water depends on the amount of broth desired. Simmer until thickest pieces are fork-tender which will be 2V to 4 hours. Remove chick en. Cool both chicken and broth promtly. We add a few mixed pick ling spices to the water in which chicken is stewed; oth ers favor three or four pepper corns, one small carrot, a cel ery stick and a small onion for additional chicken and broth flavor. Barbecued Lamburgers More west coasters like lamb than people of any other part of the country. Lamburg- ers, already-made in many markets, are bargains in good eating. They're fine simply broiled and seasoned-or try them more highly seasoned like this: 1 pound groundlamb (or 6 lambeurgers) 1 tablespoon prepared mustard 1 teaspoon salt , Vt tablespoon garlic salt Shape ground lamb with seasonings into six patties. Broil three to four inches from heat for five minutes. Turn patties. Meanwhile, combine one-quarter cup mayonnaise, two tablespoons chopped on ion, one-quarter cup chopped green pepper, two tablespoons French dressing and one tea spoon lemon juice. Arrange this mixture over lamburgers; broil another five minutes. Six servings for three or four persons. Peach Crumble With luscious fresh free stone peaches in plentiful sup ply, treat the family to this quickly made crumble peach pie. Use a pie crust mix or your favorite recipe for a nine inch flutted parstry shell. Filling. In a bowl, combine four cups peeled, sliced fresh peaches, one cup beet sugar, one-half cup all-purpose flour, two tablespoons lemon juice and one-half teaspoon cinna mon. Turn into unbaked pas try shell. Topping. Cream one-quarter cup or margarine with one-one-half cup sugar and three quarter cup sifted all-purpose flour (result will be crumbly); spread over filling. Bake in 450 degree oven 10 minutes, then in 350 degree oven 30 minutes more. Serve warm plain or with cream, whipped or sour cream. Peach Chutney Relish Delight Fourteen medium size free stone peaches and five of those just arrived Gravenstein ap ples go into this spicy, pungent relish which is superlative with all meat entrees. 14 medium-size peaches (about ZYi pounds) 5 medium-size cooking apples 2 medium-size onions 1 cup seedless raisins 8 cups beet or cane sugar 3 cups cider vinegar . 1 tablespoon ground cinnamon 1 teaspoon ground ginger V teaspoon ground cloves 1 teaspoon salt Ya teaspoon cayenne pepper Cut peeled, pitted peaches into small pieces. Put peeled, cored apples and peeled onions through food chopper, using course knife. bine all ingredients in laie- preserving kettle. Boil slowly until thick, about 30 minutes, stirring frequently, Ladle into hot sterilized jars seal at once. Makes three to four pints. If family is small, put up in half-pint jars. Plentiful Poultry, Pork; Try Shellfish in Menu So many fresh, highly sea sonal good things in the mar kets that it is difficult to tell where to begin. There's more pork than is usually on the market this time of year; good news to those who like barbecued spareribs and other pork treats on dinner table, bacon and ham on the breakfast table. Peaches and plums lead the fruit parade. Of good quality for eating out of hand, mak ing desserts; it is also time to Edite gin with poultry as usual, be cause chickens of all kinds and turkeys continue'low in cost; belong in the menu often, do something about jamming, preserving, canning and freez ing if you're a putter-upper. Other fruits. There are nec tarines, a few Bing, Lambert and Royal Ann cherries but going fast. Calimyrna, Kadota and Mission figs along with Muscat and Thompson seed less grapes are increasing in supply. Gravenstein apples are getting under way for sup erlative eating, saucing, green apple pie baking. Plenty of bush berries, but strawberry supplies are declining rapidly. Apricots are going, going, will soon be gone. Bartlett pears arriving. Fish and shellfish offer amazing menu variety at rea sonable cost; might well ap pear on our tables far more often. Currently plentiful fresh fish include salmon, the king of fish, fresh and flavor ful for broiling and baking; halibut for baking, frying, broiling. There are shrimp, lobster and crab for distinc tive hot dishes and for wel come chilled salads. Canned standbys include tuna, salmon, California sardines, Main sar dines; all of which are good on nold plates as well as in other ways. Vegetable delights include beans, carrots, cabbage, cauli flower, celery, cucumbers, let tuce, onions, soft squash, salad greens piled high, tomatoes, and corn, corn, corn.
