Just in time for the Lenten Easter season and, of course, the celebration of National Egg Month which is March. To a good cook, eggs are al most as indispensable in the kitchen as the stove itself. A famous chef once described eggs as "the cement that holds the castles of cookery to gether." From the dietitian's stand point, an egg is a combination of proteins (all amino acids needed for growth and body maintenance); essential fats; vitamins A, Bl (thiamine), B2 (riboflavin), niacin, D, E, and K; and the minerals -iron, phosphorus and calcium. All this in one of the neatest food packages ever designed. Egg Storage Treat a good egg right by storing it under proper condi tions. Keep eggs clean, cov ered and cold. Store them in the refrigerator in a carton or in a covered bowl or pan away from strong - smelling foods. Without a cover, eggs lose moisture faster and are more likely to absorb odors. Stored at room temperature, eggs may lose as much in quality in three days as those kept two weeks in a good re frigerator. . If any of the eggs have cracked shells, use them first. . To keep leftover egg yolks or separated whites until they can be used, place yolks in a dish or cup and add just enough cold water to cover. Put egg whites in a jar or dish and cover tightly. Be sure to keep them cold. Basic Egg Cookery Rules Temperature is very im portant in the care and cook ing of eggs. They should be cooked at low to moderate temperatures for the best in tenderness and flavor. Separate eggs while cold Cold yolks are less likely to break. Egg whites whip to a much larger volume when at room temperature. Avoid curdling when mak ing custards, or other mix tures that call for combining liquid with egg, by adding the hot liquid gradually to the beaten egg - never the re verse. For omlets and souffles fold" the heavy mixture into the beaten egg white - not the whites into the other mixture Don't overmix. Corn Meal Drop Cakes Have Unique Texture and Flavor Corn meal has such distinc tive and unique flavor and texture that we wonder why homemakers don't serve hot corn meal breads more often. These corn meal drop cakes, incidentally, are delicious either hot or cold. Serve them as you would pancakes for breakfast or as an accompani ment for meat, poultry or sauerkraut dishes. Vi cup unsifted flour 23 cup yellow corn meal 2 tablespoons sugar 1 teaspoon baking powder i teaspoon salt V teaspoon soda V cup (V cube) butter or margarine 13 cup milk 1 egg Sift dry ingredients togeth er in a bowl. Cut butter or margarine into dry ingredi ents until mixture resembles coarse crumbs. Beat milk and egg together and add to corn meal mixture, stirring only enough to moisten mixture Drop from a tablespoon, three inches apart, onto well greased baking sheet. Bake in moder ate (375 degree) oven 12 to 15 minutes. Remove from sheet immediately. Makes 12 to 15 three-inch cakes. Mock Turkey Drumsticks Lamb shanks look like tur key drumsticks and, if cooked in wine as they are in this recipe, they will prove so de licious that the family will ask for many a repeat. For each four servings: Dust four lamb shanks with salt and pepper. Heat four tablespoons fat in heavy skil let and saute one thinly sliced onion until tender; remove onion and save. Brown lamb shanks thoroughly; return onion to skillet and pour in IVi cups California Sauterne or other white table wine. Cover tightly and simmer gently for IV2 to two hours or until meat is very tender. Remove lamb shanks to hot platter. Add one can mush room soup to liquid in pan; blend well and bring to a boil. Salt and pepper to taste. Thicken with cornstarch if heavier consistency is de sired. Pour sauce over shanks or serve separately. Spectacular prices often mark chicken backs and wings which are ideal for making tasty broths and soups, or to please the many people (particularly children) who truly prefer fried chicken wings to any other part. Turkey production is up and since it is packaged in such convenient forms, there is a just right size for every family. Newcomer in turkey delights, frozen bar becued turkey (halves and quarters), is increasing in popularity. Pork is the leader in the meat department with lamb running a close second. Pork supplies will be heavy since slaughter is expected to range 15 to 20 per cent above last year's. Supplies of lamb will be somewhat larger than last year. Plenty of beef for all comers with quite a price span. When shopping for meat, remember to check the cost per pound of the edible por tion. You may be surprised at the results. Vegetable Department. California's navel orange in dustry is enjoying one of" its best years in history with a corresponding upgrading in the quality of the fruit. Delicately flavored, rich in food value avocados are in good supply. Bananas are available at their usual steady price. Brophy iixecutrix Trains Collide in Mexico; 1 1 Perish Mexico City - (UPD - A freight train ploughed into the rear of a slow moving pasenger train east of here late Thursday, killing at least 11 persons and injuring about 70, it was . announced today. The dead included five men, three women and three children. The passenger train, on the way here from the provincial capital of Puebla, had stop ped to repair a hotbox. It was underway again, at minimum speed, when the freight hit it near Xomelta, 27 miles east of here. The Chief Executive has run a network of tiny electronic wires around the interior of a new barn and the system is designed to discourage the presence of flies. Fly lights on the wire-dead fly. Sooner or later, the flies get the idea and. depart for more conventional barns where self-respecting flies can buzz with abandon without fear of death in the walls. May Reopen Home With Mrs. : Eisenhower re turning from Arizona anytime now, the President's home in Gettysburg may be reopened shortly and he will start spending week ends there again. The house was closed during January and February. CIGAR SALES UP Bonn, Germany- (DPD -Sales of cigars are on the increase in West Germany due to a fad by German housewives to join their husbands in an after din ner smoke. at outdoor ceremonies here honoring Simon Bolivar, the South American liberator, of 20 or more dignitaries on the speakers' platform, Eisenhow er was the only one without a topcoat. The sky was overcast, a light breeze was coldly pene trating, although the tempera ture was somewhere around 59. Yet the President stuck it out for 25 minutes without a coat, nor did he put on his hat until the program 'was over. He looked cold. Protects Bald Head Eisenhower takes no such stoical attitude early in the morning when he emerges from a breakfast conference to pose with his guests for pictures on the shaded north portico of the White House. The President usually walks out on the steps sans hat and coat, but after the photograph ers snap a picture or two, he begs off and hurries back in side. The other morning he said to the cameramen, "you fel lows have on hats, but I don't want my old bald head to freeze." Army friends of Maj. John S. Eisenhower, the President's son, say he noticeably pained behind the scenes when he reads or hears criticism of his assignment at the White House as assistant to Brig. Gen. Andrew J. Goodpaster, the White House staff secre tary. One officer who has known John since his days as a West Point cadet says, "he didn't seek out this job by any means." Another officer sev eral grades above young Ei senhower also has this opin ion: "The White House expe rience should make him a bet ter officer. Not many majors, or, for that matter, not many generals ever get a truly in side view of just how much civilian effort goes into the operation of a military organ ization." Several Reasons There seems to be several reasons behind John's station at the White House. One, the historic experience of serving at the side of a father and president. Other Presidents certainly have worked, mem bers of their families into the White House official machin ery and other phases of gov Another factor: John can be a highly effective buffer for his father. He'll see to it that the President gets enough rest, that he isn't overburden ed by ceremonial duties, that his schedules are not unwise ly rigorous. For example, young Eisenhower played an active role in working out the minute-to-minute schedule for his fathers' recent visit to Acapulco, Mexico. No one has freer, at-any-time access to the President's office than John and his im mediate boss, Goodpaster.
