"The man who wrote it-Bartholomaius de Platina- apparently had quite a weak ness for rose water and ground-up rose petals as fla voring. He even used rose water to season boiled and poached eggs! "In many cases, the aro matic water was probably added to disguise flat, gamey or rancid food," said Mrs. Studio To Hold Party Thursday A fall registration party will be held at the Colleen Hope Dance Studio at 45 Hawthorne avenue Thursday, September 4 for dance stu dents and their friends. Only Private Copy "De Obsonis ac Honesta Voluptate," printed in Venice in 1475, is supposed to be the oldest dated edition of the world's first printed cook cook, Mrs. Rudkin said. Her copy is the only one in the United States in a private collection. The other eight are in institutional libraries. Translated, the title reads, "Of Meat Dishes and Honest Enjoyment." De Honesta Voluptate, as the book was commonly known, was issued only 20 years after the invention of the printing press, Mrs. Rud kin said. Her copy, 186-pages long, is printed in Roman type on sheets with wide margins. But the binding, she said, is not original. The volume was rebound in pigskin-covered marbled boards sometime in the late 16th or early 17th century. "In a way, it's remarkable that Platina's book was writ ten or published," Mrs. Rud kin explained. Casual Instruction "Up to his time, only a man named Apicius had writ ten about food and cooking and then only in manuscript form. And, of course, house holders in those days vied with each other to hire skill ful chefs who hoarded their cooking secrets jealously." Even Platina, who later became Vatican librarian, didn't give away every trick of his own kitchen. "He was quite casual with cooking directions," Mrs. Rud kin said. "He evidently ex pected cooks to work out cor rect ingredient proportions themselves, but he did give fair warning of certain recipes he liked but thought , Squid pie was one of Pla tina's favorites, and he also favored stork, swan, swal lows, blackbirds, and thrushes.. Does Mrs. Rudkin plan to adopt any of Platina's recipes for her bakery firm? "No," she said, "but the modern cherry cheese pie is a direct descendant of his cherry tart. It was made from ground sour cherries, cheese, eggs, sugar and flavorings, baked in a crust.".
