Thousands of years be fore that, somehow mam moths became entangled and were frozen in the Artie lands and have been uncovered dur ing this century after 10,000 years of refrigeration, or more, with the flesh still edible whenever it has not been exposed to warmth. How ever old, the preservation of food by freezing did not be come a commercial proposi tion until a hundred years ago. Since then, however, refrig eration has become one of the most important of all our food preservation processes and its applications are increasing. Besides safeguarding food in our home, it preserves it in transit by truck, railroad, ship and airplane. In addition, it cools public buildings and our homes. In many instances refrigera tion has changed the destiny of nations. With refrigeration sections of the U.S., Candad, Australia, and the Argentine have become great meat- pro ducing lands- and the Low countries, too, who deal large ly in dairy products; to say nothing of such fish-catching countries as Norway and Eng- land whose catches thousands of miles from home are ship ped worldwide. 'Home' Uncomfortable Refrigeration does not ster ilize food by destroying decay organisms. It merely makes 'home" darned uncomfor table. Denied warmth, mic robes do not grow or mutiply enthusiastically and when temperatures reach the freez ing point of water, they show little signs of .life. Then, as water in the food cools and eventually freezes the decay microbes will not grew at all because they need liquid wa ter to drink and cannot make out in solid ice'. Even when frozen, microbes are not necessarily destroyed. Warm the meat and they re vive and begin to multiply like sixty often flourishing in the extra moisture conden sed ori the cold meat. Frozen in this way, water seeps from the muscle fibers and freezes solid in the spaces between the fibers. In doing so, the structure of the meat itself is damaged and the texture and flavor are affected and when thawed a red 'drip' oozes from the meat, carrying away ex tracts from the muscle cells. Can Be Avoided This breakdown and change of taste can be avoided. In stead of freezing the meat slowly thus permitting cry stals of ice to grow steadily to a comparatively large size, the meat is frozen quick ly. Then water in the serum has no time to seep through the muscle fiber walls, nor can it grow into large cry stals. It freezes rapidly, rather into very tiny crystals which are held within the muscle fibers. These tiny crystals do not damage the muscle struc ture and when thawed the meat's flavor and texture are not impaired and are compar able to fresh meat. This is quick-freezing. Since World War II, it has made the market. Kept frozen they retain quality and taste al most indefinitely; thawed they cannot be refrozen again slowly without deteriorating in quality. So, friend, once you've taken your venison, duck or fish out of your community locker, better invite your friends over for dinner quick like, and lap up the feast. Good eating to you, thanks to modern refrigeration.
