Many of them, it said, could get jobs readily in fields close ly related to agriculture. The department said there will be two such jobs waiting this year for "almost every graduate in agriculture from the land grant colleges and universities. It said there are about 15,000 job openings for the expected 8,500 graduates in teaching and research, extension communica tions, conservation services and other farm-related activities. Many other jobs in industry, trucking, artificial breeding, re pair and servicing of farm ma chinery, fruit spraying, airplane dusting, and many other fields will be available for those who do not have a college education, it said. On a national average there now are 168 young farm men to replace every 100 farmers who die or reach retirement age. As a result, almost 40 per cent of boys now growing up on farms are expected to seek off-the-farm jobs when they reach manhood. The increase in off-farm em ployment oportunities has ac companied the national decrease in the number of farms. There are about 1.6 million fewer commercial farms now than there were 25 years ago. City or Town. Aging Breaks Down Meat Cell Tissues Chicago (IP) Every steak fancier knows that an aged steak tastes better, but few understood what happens to a choice piece of beef when it "ages." B. C. Breidenstein, head of the meats division of the Uni versity of Illinois, explained recently that aging breaks down cell tissue by enzyme action which makes meat more tender and improves the flavor. Meat is aged by holding It at a controlled temperature, gen erally about 37 degrees, and a relative low humidity for three to five weeks. Some major food chains use higher temperatures and humid ity for shorter periods. Beef ages most satisfactorily but, said Breidenstein, good re sults are often obtained with lamb.
