FOUR MEDFORD (OREGON) Feeding the By ZOLA rood He-enly Hamburger Patties With Zeily Sour Cream Sauce Hamburger patties are alwayg wonderful fare. Here we dress them up with their own zesty sour cream sauce for something really special. Makes eight serv ings. 2 pounds ground beef 2 cups (firmly p a c k ed) soft bread crumbs 1 cup milk 2 teaspoons salt 1 teaspoon monosodium gluta- mate 4 tablespoons shortening 2 cups commercial sour cream 1 cup catsup 2 tablespoons Worcestershire Salt Mix together the beef, bread crumbs, milk, two teaspoons salt and the monosodium glutamate. Shape into eight thick patties. Brown on both sides in the shortening; pour off almost all drippings. In a bowl mix the sour cream, catsup, Worcester shire and salt to taste; pour over patties. Cover pan 'und simmer 20 minutes. Turn and baste patties frequently. Serve on toast or with rice as an accompaniment. Vegelable-Cheeso Casserole Dressoi-up Leftover Vegetables Here is "an interesting, flavor ful way to dress-up those left over vegetables which are frequ ently such a headache. Needs only 35 minutes to cook and works well with any vegetable that blends with cheese, which takes care of practically all of them. Makes six servings. 1V cups scalded milk 1 cup soft bread crumbs ' cup melted butter 2 canned pimientos or Yi cup chopped green pepper 2 tablespoons chopped parsley 2 tablespoons chopped onion IV2 cups grated Cheddar cheese teaspoon salt V teaspoon pepper 3 eggs 1 to 2 cups drained cooked vegetables Paprika Pour scalded milk over bread crumbs. Add butter, pimiento or green pepper, parsley, onion, grated cheese and seasonings. Beat eggs thoroughly then add to cheese mixture. Place vege tables in well greased IV2 quart casserole; pour cheese mixture over vegetables. Set in pan of warm water and bake in a slow oven, 300 degrees, about 35 min utes or until loaf is firm and lightly browned. Sprinkle with paprika for extra color. Hungarian Goulash Rich-Tasting Stew On cool evenings, stew for din ner is as welcome as a friendly handshake. This rich-tasting Hun garian goulash, or stew, is par ticularly enticing. Bouillon and paprika give it it's distinctive flavor. Cut one pound beef stew meat into one-inch cubes and brown in some fat. Add one clove minced garlic, two sliced medium onions, two teaspoons paprika, one tea spoon salt, one-eighth teaspoon pepper, and two cups boiling wa ter in which two bouillon cubes have been- dissolved. Cover and simmer 2Vz hours. Add one cup water and two cups diced pota toes. Cook 20 minutes longer, or until potatoes are tender. Makes four servings. Broiler-Size Chickens Menu Bargain Item A luxury Item 20 years ago, broiler-size chickens are bargain menu items today; on many tables twice a week. 'In 1934, United State Department of Ag riculture didn't even bother to count them. They counted last years crop though and came up with a total of .1,500,000,000 (that's a billion and a half) birds; and one third of them were broil ers. We're now eating 23 V. pounds per capita and enjoyment is in creasing right along as we fix those popular broilers in ways like these: Bleu Cheesed Broilers This recipe makes enough bast ing sauce for two broilers split in salf or two fryers cut in serv ing pieces. The resultant flavor flattery will please all. 1 cup salad oil 1 cup lemon juice Yi cup finely crumbled bleu cheese 2 tablespoons Worcestershire sauce s 1 teaspoon salt V teaspoon pepper 2 broilers or fryers Combine salad oil and lemon juice with bleu cheese and blend thoroughly. Add Worcestershire sauce, salt and pepper and allow to set until flavors blend thor oughly. Wipe off chickens (halves or pieces), - dry well. When ready to broil in the oven or barbecue over charcoal, brush chickens well with sauce. Baste frequently while cooking. Western-Style Broilers This sauce is especially design ed to enhance the already delic ious flavor of chickens. It can be used for broiling or outdoor barbecuing. Enough sauce for one large fryer cut in pieces or two broilers split in half. Combine in a saucepan one fourth cup chopped onion, one fourth cup brown sugar, one- eighth teaspoon black pepper, one-half cup catsup, one table spoon lemon juice, one-fourth cup salad oil, one teaspoon Wor cestershire sauce, on crushed bay leaf, one-half teaspoon salt, two tablespoons chopped green pep per, and one-fourth cup finely chopped celery. Bring to boil and simmer gently for five to 10 min utes. Wipe off chicken and sprin kle lightly with salt and pepper. When ready to broil or barbecue, brush chickens with sauce. Lamb neck pieces are tasty when brais ed. Lamb breast is tops for stews or try them just salt and pepper ed and browned under the broil er. Smoked, boneless picnic shoulders offer excellent flavor and nutrition at low prices. Poultry and Eggs. Chickens with the accent on broilers and fryers continue to wear low, low price tags. Eggs are in excellent supply. Now is the time to enjoy angel food cakes, lots of nutri tious egg nogs and crustard pies. Vegetable Department Aspara gus is still plentiful, but the end of the season is fast approaching, so enjoy it now. Lettuce, car rots, cabbage, celery, summer and Italian squash, potatoes and onion are in good supply. Fresh peas, spinach and green beans are available at fair prices.
