    Ernie Cooper Takes
Oath at Gold Hill
Council Meeting

Cold Hill Mayor-elect Ernie
Cooper was sworn in Monday
night, Jan. 7, at a meeting of the
Gold Hill city council by Floyd
Lance, council president.
Five councilmen also were
sworn in. Taking the oath for
the first time were Truman
Price, Edward Tulare, and
Kendal Dufur. Also talcing the
oath were two former council
men, Virgil Gribble and Harry
Foley, and the city recorder,
Ferd Jones, who was reelected
last fall.
Mayor Cooper appointed the
standing committees for the en
suing year.
Council President
The council reelected Floyd
Lance to serve as council presi
dent. The appointment of Floyd C.
Taylor, as city superintendent,
and chief of police, for the next
two years was approved.
A resolution required every
two years designating the Unit
ed States National bank, Med
ford branch as depository of
city funds, and authorizing sig
natures to be used on city bank
checks, wa passed.
Ray V. Neilson, 44 Sixth st.,
was granted permission to dis
mantle and dispose of old car
bodies at the city dump.
An ordinance was passed es
tablishing a uniform charge for
sewer connections to the city
sewer system. A charge of $65
will include labor and materials
for connecting.
J. Fred Lewis requested that
the council take appropriate ac
tion to vacate that part of Fifth
ave. east of First st. and extend
ing to the Sams Valley rd. The
matter was referred to the street
committee for study and report.
Doors Repaired
Police Chief Floyd C. Taylor
reported that the fire hall doors
are in the process o( being re
paired.
The council also granted Tay
lor permission to purchase 12
Junior Police badges.
A contract to furnish and in
stall doors and windows at the
city garage was awarded Mel
Kuikman at a cost not to exceed
$410. Kuikman was the only one
to submit a bid.
The problem of what action
to take where private wells are
dug and owners disconnect from
the city water system was dis
cussed and referred to the water
committee for study and report
at the February meeting.
The street committee agreed
to study complaints concerning
city street drains.

Replenish the pantry pine
apple shelf with seasonal goo
buys. Keep these uses in mind;
coarse or fine crushed pine
apple for two-crust pics, soft
pies of all kinds, fillings and
toppings, icings, jams, cookies
and using with cake mixes of
all kinds. Pineapple slices are
best for upside-down cakes, glaz
ed tarts, decorating, garnishing,
coffee cakes and filled rolls.
Pineapple tid-bits and chunks
are just right for salads.
And of course unsweetened
pineapple juice for flavoring
apple pies, for cake mixes (sub
stituting for whatever liquid
called for in recipe), for blend
ing with other flavors . . . and
for sheer enjoyment, chilled as
it comes from the can.
Pinoapplo Kuchan
Fruity Coffee Caka
A fruity hot coffee cake, fresh
and aromatic from the oven is
a fine finish for any meal along
with plenty of good coffee. Milk
for the children, of course. This
is quickly made with a package
of hot roll mix and a 9-ounce
can of crushed pineapple. Ten
servings. Make sweet dough of
one package hot roll mix, fol
lowing package directions. After
first rising, pat half the dough
into a greased 10-inch round
cake pan. Combine one-half cup
brown sugar, firmly packed,
one-quarter cup butter or mar
arine, one-half teaspoon cinnam
on and one-quarter cup Mara
schino cherries cut into quart
ers. Sprinkle dough with half
this mixture. Add rest of dough
patting down evenly. Spread
with one nine-ounce can crush
ed drained pineapple. Add two
tablespoons flour to remainder of
sugar mixture and sprinkle over
top.
When doubled in size bake in
hot oven, 400 degrees, 40 to 45
minutes.
Spicod Grapefruit
It may surprise you to know
that 40 per cent of the grape
fruit crop is canned; goes al
most entirely into whole seg
ments with Florida doing 99 per
cent of the canning. Grapefruit
sections are a very good buy
and every can is packed with
good nutrition. Here's a fine
first course for brunch or lunch;
a good dessert when served with
cookies.
Drain two cans grapefruit
sections. Pour grapefruit syrup
into saucepan, boil rapidly two
minutes. Add one-quarter cup
firmly packed brown sugar, one
half teaspoon whole cloves and
one-half teaspoon nutmeg; sim
mer five minutes. Remove from
heat; add grapefruit sections.
Serve hot or chilled. Six serv

If you haven't tried cooking
bright western-grown carrots,
green pepper and onion with
fryer size cut-up chicken and
a dry sherry wine, you've been
missing a real treat. So easy to
do; then just leave barely sim
mering until ready to serve.
Perfect with steamed rice or
noodles. Four generous servings
using two 2'2 pounds fryers or
cut-up broilers.
Two fryers, cut-up
Salt and pepper
'i cup oil
1 clove garlic, minced
Vi cup chopped green pepper
6 carrots, cut in quarters
6 small white onions, optional
1 bay leaf '
2 cups dry sherry
'i teaspoon rosemary
Clean and wash chicken, dry
and season with salt and pepper.
Brown chicken in oil in heavy
skillet; remove to platter. Add
garlic, onion, green pepper,
whole onions and quartered car
rots to skillet; brown lightly.
Add sherry, bay leaf, rosemary
and chicken. Cover tightly; cook
over low heat about 45 minutes
or until chicken is tender. Serve
with vegetables and pour ad
ditional sauce over chicken.
Pork A' Plenty for
Spanish Specialty
Here are six generous serv
ings for a shoulder pork chops
or diced pork shoulder skillet
specialty certain to delight the
family. These pork cuts are
reasonable in price.
Brown six pork shoulder chops
cut one-inch thick or l'-z pounds
diced pork shoulder in skillet.
Add one cup sliced onion and
brown lightly. Add 2'2 cups
cooked tomatoes, one-quarter
cup diced green pepper, one
third cup diced celery, one
quarter teaspoon chili powder,
l'2 teaspoon salt, one-eighth
teaspoon pepper, one teaspoon
sugar; cover and cook slowly
one hour. Make smooth paste of
one tablespoon flour and two
tablespoons water. Stir in to
the mixture. Stir until thicken
ed; cover and simmer about
five minutes.
Canned Fruits, Vegetables,
Lead Parade of Best Buys
January offers exceptionally
good buys in canned foods as
ware-house stocks move into
grocery stores and grocery store
stocks move to consumers via
advertising and special displays.
Few things are more satisfying
to the home maker than well
stocked shelves of staple, con
venient, every day foods that
can meet daily demands as well
as those for emergency rations.
When you buy canned foods
it will pay to buy the half dozen,
buy the dozen or buy the case
according to family needs, money
available and storage facilities.

pears, peaches, purple plums,
pineapple, and grapefruit sec
tions are much the most popular
staple items with apple sauce
and cranberry sauces leading
among the "soft" fruits. Citrus
juices in the large economy size
cans are a good buy.
Canned Vegetable Buys. Corn,
both cream style and whole
kernel, is particulary abundant
with supplies at an all-time high
and prices extremely favorable.

Group May Restore
Millrace at Eugene
Eugene U.PJ A citizens'
group in Eugene today launched
plans to restore the traditional
millrace through the city while
at the same time using the wa
ter for irrigation, improving the
flow of Amazon creek and main
taining the level of Fern Ridge
lake, 11 miles northwest of
here.
A plan proposed by Dr. E. D
Furrer, a Eugene physician,
would divert millrace water
through a six-foot pipe to Ama
zon creek.
The Millrace Citizens' commu
te said the year-around flow
would end unsanitary conditions
on Amazon creek, converting it
into an attractive waterway.
Millrace water in the Amazon
would be used for irrigation wa
ter west of Eugene and the rest
would flow into Fern Ridge lake.
Estimated cost of the project
was set'at between $260,000 and
$500,000 to be financed through
sale of irrigation water.

Circuit Judge Frank J. Lonergan
yesterday dismissed a grand jury
indictment against Jim Purcell
Jr., which had charged the for
mer police chief with malfeas- j
ance and incompetence in office. ,
Judge Lonergan ruled that the :
question raised in the indictment j
was moot because the only office !
from which Purcell could be re !
moved, if convicted, is that of !
chief of police. Purcell already ;
has resigned and gone back to 1
his civil service status of police !
captain.
Purcell resigned as chief at
midnight Dec. 31. His attorney.

the indictment last week. i
