HOME-MADE CANDIES Please one, please all with home-made
candies. They're so easy to make and to decorate smartly in ways
pictured here and talked about in today's food columns. Good
last minute packaging ideas, too.
Festive, Easy to Maka Candies
Sure Hit for Last-Minute Gifts
With Christmas practically
upon us a candy-making session
may well be the answer to the
last-minute gift situation. A per-
f e c t neighbor-to-neighbor holi
day gesture would be a variety
of home-made candies packaged
in attractive usable containers
such as vases, bowls, refrigerator
dishes, cannisters or casseroles.
However, any box or can with
lid will take on Yuletide glam
our when covered with easy to
handle metal foil. Tape on a
sprig of holly or tie with a large
bow in contrasting color to add
that certain something for a gift
of "taste" and beauty.
Cherry Nut Fudge
3Vz tablespoons (VS package)
cherry-flavored gelatin
W cups sugar
Vs teaspoon soda
cup milk
2 tablespoons butter
V cup chopped candied cherries
Vi cup chopped walnuts
Combine gelatin, sugar, soda
and milk in saucepan. Cook and
stir over medium heat until the
gelatin and sugar are dissolved.
Continue boiling, without stir
ring, until a small amount of
mixture forms a soft ball in cold
water (or to a temperature of
232 degrees, if you've a candy
thermometer.) Remove from
heat; add butter. Cool to luke
warm (about 120 degrees). Then
beat until mixture thickens and
loses its gloss. Quickly stir in
chopped candied cherries and
chopped walnuts. Turn at once
into greased 8x8 inch pan. When
firm cut into squares. Top with
walnut halves or bits of green
or red maraschino cherries.
Chocolate-Dipped Nuts
Ideal for Christmas giving, if
the family doesn't get to them
first. Use Brazil nuts or, almonds
and candy-making chocolate. For
dipping it is best to have room

Heat candy-making chocolate
over hot water until partly melt
ed. Remove from heat and stir
rapidly until entirely melted.
When chocolate feels cool to the
touch or when cooled to 83 de
grees by candy thermometer,
dip one end of each nut in the
chocolate. Then place on waxed
paper until chocolate hardens.
Of course you can dip it all in,
but half-done looks fancier and
doesn't get chocolate on your
hands.
If any chocolate is left over,
pour it into a pan lined with
waxed paper and keep in cool
place (not in refrigerator) to use
for future dipping. Or better still
add cropped nuts andor raisins,
then form into clusters. Place
on waxed paper to harden. '
Foolproof Fudge
Just what the holidays or
dered is a foolproof fudge recipe.
Fudge failures such as too soft
or crystalline texture, or rock
like hardness are things of the
past with this tested easy "recipe.
The children will enjoy making
this.
2 packages (2 cups semi-sweet
chocolate morsels
3A cup .sweetened condensed
milk (not evaporated)
Melt chocolate morsels over
hot, not boiling water in top of
double boiler. Remove from heat.
Stir in milk and mix until well
blended. Pour into an 8x8 inch
buttered pan, or shape as de
sired. Allow to stand several
hours. Makes approximately 1V4
pounds. For thicker pieces dou
ble recipe.
Variations. Pour mixture into
pan then cut into squares. Press
whole almonds, walnut or pecan
halves in each square, or, shape
into three-fourths inch balls,
then roll in chopped peanuts or
chopped coconut.

Scrambled Eggs With Cheese
For Special Breakfast Pleasure
Christmas morning is the. time
to concentrate on a particularly
good breakfast ... As part of
the festive spirit and as a good
nutritional foundation for per
haps too many sweets later in
the day. Broiled grapefruit with
it's tart appetite-appealing fla
vor would be a nice starter. Fol
low with these scrambled eggs
and - .aybe a not too-sweet muf
fin or coffee cake. Lots of steam
ing hot coffee for the grown
ups. 8 eggs
V cup milk
teaspoon salt
Pepper
4 tablespoons butter
to 1 cup diced cheddar cheese
Beat the eggs well; add salt
and dash of pepper and the milk.
Melt butter in heavy- skillet.
Pour eggs into pan and place
over low heat. Stir as the mix
ture begins to thicken. . When
eggs are partially cooked, add
cheese. . Served on toast or per
haps with some hot cranberry
muffins and butter. Be sure not
to overcook. Eight servings.
Cranberry Muffins
This fine recipe was garnered
from the foods editors confer
ence a while back. It depends
on raw coarsely chopped cran
berries and wheat germ for dis
tinction. If you plan on using
these for breakfast you can
speed things up by sitting dry
ingredients and combining with
shortening the night before.
1 cup raw, coarsely chopped
cranberries
13 cup sugar
1 cup sifted flour
2 teaspoons baking powder
Vi teaspoon salt
Vi cup sugar
cup wheat germ
V4 cup shortening
1 egg, beaten
Vi cup milk
Combine chopped cranberries
and one-third cup sugar. Sift to
gether flour, baking powder, salt
and one-cup sugar into mixing
bowl. Stir in wheat germ. Cut
in shortening until mixture is
fine. Blend together, egg and
milk. Add all at once to wheat
germ mixture and stir until dry
ingredients, are just dampened.
Fold in cranberries lightly.
Spoon batter into 12 well
greased muffin cups. Bake at
400 degrees 20 to 25 minutes.
Serve hot with lots of good
butter.
Turkey Timbales
With Mushroom Sauce
Most of us are always on the
lookout for distinctive ways to
make the most of turkey, so
here is a recipe that does just
that. Chicken or tuna may re
place the turkey with equally
delicious results.
6 tablespoons butter or marga
rine 6 tablespoons flour
IVi cups rich milk (light cream)
1 cup turkey stock or canned or
bouillon-cube chicken broth
Vi cup California Sauturne or
other white table wine
2 cups ground, cooked turkey
(include gizzard and heart,
if you like)
3A cup firmly packed soft bread
crumbs
2 eggs, slightly beaten
Salt and pepper
2 tablespoons minced parsley
1 (2-ounce) can mushroom stems
and pieces
Melt butter and stir in flour;
add milk, stock and wine; cook
stirring constantly, until mixture
is thickened and smooth; season
to taste with salt and pepper.
To one cup of sauce add turkey,
bread crumbs and eggs. Blend
well. Spoon mixture into six
well greased custard cups.- Set
in shallow pan of hot water and
bake in moderate oven (350 de
grees) for 30 minutes or until
firm. Meantime, add parsley and
mushrooms, including liquor, to
remaining sauce. Heat thorough
ly over boiling water or very
low flame. Unmold baked tim
bales, garnish with parsley and
serve at once with sauce. Six
servings.
Sweetbreads and Chips
A delightfully different meat
dish. Cranberry sauce or other
tart relish goes especially well
with this. Add a buttered green
vegetable, hot rolls and dinner
is ready. ' ,
1 pound sweetbreads
1 egg
Vi cup orange juice
1 teaspoon salt
IV2 cups crushed potato chips
1 tablespoon butter
Place sweetbreads in boiling
salted water. Lower flame and
simmer gently for 25 minutes.
Cool. Remove thin outer mem
brane, then cut in half lengths.
Combine egg, orange juice and
salt. Dip sweetbreads into mix
ture and then into crushed po
tato chips. Arrange in a small
baking pan. Pour remainder of
egg mixture over top and cover
with remaining potato chips. Dot
with butter and bake in mod
erate (350 degree) over for 20
minutes.
