FLAIN WHEAT IS GOOD TO EAT Payday for the staff reminds me of (1) the S3 a week (60 hours) I was paid when I worked in the brickyard in Canandaigua in vacation time, and (2) the wonderful dinner one could get for 25c at Statler's restaurant in Buffalo in the halcyon days that was in the basement. On the mezzanine a de luxe dinner cost 45c, we stu dents were informed, and eight years later Micky and I tried it, for our wedding breakfast, but I can't remember, though I have no doubt it was as good as one would expect a Statler meal to be. Reverting to my S3 pay en velope 5c an hour I tried to compute what the equivalent would "be in terms of the purchasing powrer of the dollar today . . . and all that sort of thing, but if there's anything that irks me . . . never mind now, just suppose you are on the way home to wife and children when a gang of hoodlums over takes you, help themselves to the soft stuff, toss the small change back into the pay enve lope and tell you to beat it. Would you say you were en riched? Have you ever noticed the word "enriched" on the package of white flour or on the wrapper of the loaf of bread you get at the store or market nowadays? It means that the millers kindly restore to refined white flour some of the vitamins and min erals of which the wheat is robbed in the process of refin ing. This, according to govern ment and nutrition authorities, is not only enrichment, but, by gum, it is "for better nutrition!" If you doubt it you had better keep your trap closed or else. The ultrarefinement of flour began away back before your time, even before my time, and I'm as old as the hills, the Bristol hills west of Canandaigua Lake or Bluff Point and other beau tiful hills around Keuka (the two most beautiful Finger Lakes of Western New York, if you haven't seen anything yet).
