The Illinois Democrat, Sen.

mind about those Texas million

He told a Senate subcommit

was willing to buy up a govern

"For once," said the gentleman
from Illinois, "I welcome Texas

said.
Rep. Thurmond Chatham, i

Sen. Mathew M. Neely, Demo

often criticizes his colleagues
for making too much noise talk

day for a chance to introduce
a bill, which would create a

Columbia. Finally, the senator
dunked his bill in the hopper
and said: "Just wanted to show
my colleagues you can intro

speech."
Injured Pilot Removed
From Sierra Ranger Post
Quincy, Calif. (U.R) A
dazed and bleeding pilot was
taken from a remote ranger out
post in the rugged Sierra to a
nearby hospital yesterday, after
he had crawled and stumbled to
the uninhabited station after he
crash-landed his failing plane.
Link Peckinpah, ranger in the
Plumas National forest, said the
pilot, David Arrowsmith, San
Francisco, was taken out by an
ambulance team from the West
ern Pacific hospital at Portola,
about 20 miles east of here.
He said he was suffering from
shock, was badly bruised and
cut, and that one of his arms
was broken.

To refer to all cigars as "sto

a long, thin cigar made of do

Washington, Pa. Shortly after

its activities in Wheeling, W. Va.

years all stogies were hand

Questioning my statement that
bartenders are paid "excellent
salaries," a Baltimorean, so en

a week. Until recently he was
paid $40 a week. That certainly
is low pay for an activity re
quiring so much skill and
knowledge plus the possession of
a pleasing personality. The wages
of bartenders differ greatly. In
San Francisco they are paid $80
a week and up. Quite a few San
Francisco bartenders are paid
$100 a week. Some even more
than that.

Rooney's remarks followed a

U Difference in Meat ValueToday
Prices of top grade meats are pretty much the same
everywhere. So to get value, you have to be sure that
every ounce of meat you. buy eats perfectly. That is
why we believe you will be interested in these facts:
Q. What is meat aging?
A. Meat aging ts the holding and conditioning of meat until
it reaches eating perfection by its own natural processes
instead of sending it immediately to market. Safeway aids these
processes by providing proper conditions of temperature and
humidity. As explained below, natural changes take place in
meat during aging ... changes that improve the eating quality.
Q. Will all meat take aging?
A. No. Pork and veal shouldn't be aged, and poor beef and
lamb are not improved by aging. But top UlS. Government
grades of bef and lamb, such as Safeway buys, benefit by aging.
Q. Does aging improve meat flavor?
A. Yes. During the aging of fine beef anil lamb under proper
conditions, the flavor-carrying extracts in the meat tissues
'develop and permeate the meat
Q. Does aging increase meat tenderness?
A. Yes. Even naturally tender meat like rib roast of beef,
lamb loin chops and fine steaks reaches maximum tenderness
only with aging. That's because aging softens tough fibers an3
tissues makes for tender eating.
Q. What aboot juiciness? "
A. Meat aged under correctly controlled conditions of humidity
and temperature such as you find in Safeway's Central Meat
Aging Plant retains its natural juiciness. Such meat does not
dry out. It shrinks less in cooking. Every bite is juicy.
Q. Is an beef and lamb at Safeway properly aged?
A. Yes. Safeway pioneered, at its own expense, ways to make
it possible for retail stores to sell properly aged meat. Over a
period of 16 years, Safeway meat experts developed meat
aging procedures, plants and facilities that never before existed
in the retail meat field and put them into operation in many
areas throughout the country.
Safeway's Central Meat-Aging Plant here is the climax of
this work. For you, it means that each and every cut of Safeway
meat you buy has the exact aging it requires to develop its finest
eating quality.
Q. How can this value difference be proved?
A. Select your favorite cut of meat at your nearest Safeway.
Take it home. Cook and serve it as you prefer it. Eat it and
judge its value in tenderness, juiciness and flavor.
If you don't like your Safeway meat for any reason
whatsoever we will give you all your money back with
out fuss or quibble.
