Newspaper Page TextFeeding the Family By ZOLA VINCENT Food Editor Stuff Frankfurteri With Savory Kraut New fillip for an old favorite In this tasty combination, the franks are cheese-stuffed and baked; the kraut combined with ' onion, caraway seed and catsup. Verrrry good! 2 frankfurters 8 strips of cheese 8 slices bacon 1 No. 303 can sauerkraut (2 cups) 14 teaspoon caraway seed 2 tablespoons finely chopped onion V4 cup catsup 3 tablespoons brown sugar Combine kraut with last four Ingredients and simmer covered for 20 minutes. Split each frank furter lengthwise without cut ting all the way through. Fill slits with cheese and wrap franks with bacon fastening each -end with toothpicks. Bake on a rack in a shallow pan at 425 degrees for about 15 minutes or until bacon is cooked to desired crisp ness. Serve kraut topped with stuffed franks. Four generous servings. Fish Fillet Chowder Satisfying chowder for six servings to family home at lunch or for suppertime. Cut one pound any favored fish fillets into one inch pieces. Fry one quarter chopped bacon or salt pork until lightly browned. Add one-half cup chopped onion and cook until tender. Add two cups hot water, one cup diced raw potatoes, three-quarter teaspoon salt, dash of pepper and the-fish. Cook about 15 minutes or until potatoes and fish are tender, Add two cups milk; reheat. Gar nish with chopped parsley. Date Cup Cakes Served Upside Down It is Date Festival time in Indio, heart of California's Coachella valley, where grow the only commercial crop of aaies gruwii ui me uuutu oiaies. Here is a truly different kind of cup cake, filled with chewy goodness and served upside down. Very quickly made and : baked. "- Sift and measure one-half cup sifted flour together with one- hail teaspoon basing powder, one-quarter teaspoon salt onto ; a paper; add one-half cup chop ' ped fresh pitted dates and one " half cup chopped walnuts and ; set aside. Beat two eggs in mix ; ing bowl. Add one-half teaspoon :: vanilla; then gradually beat in ; one cup (firmly packed) brown i sugar. Stir in flour and fruit and 5 mix well. Fill well-greased tiny muffin pans not more than two ; thirds full and bake in moderate- ly. hot, oven -375 -degrees,-aboutf : 1.5 minutes. Cool on rack, then tore tightly covered. Do not frost. Twenty-four cup cakes. ,f Canned Red Cherries American Favorite . The r canned tart red pie cherry is ; enjoyed the year around. These : recipes use one No. 2 can. Cherry Nut Custard Combine two-thirds cup sug ar, one-half cup flour, one-quar ter teaspoon salt. Add two cups f scalded milk gradually. Cook 15 I minutes in double boiler, stir ring constantly until mixture thickens and afterward stir oc casionally. Add two slightly beaten eggs and cook two or three minutes longer. Cool and fold in one teaspoon vanilla or almond extract, one No. 2 can red tart pitted cherries and one- half cup broken nut meats, : Serve with cookies. Six gener ous servings. Cherry Apple Cobbler ' - For the crust, use any favor ed baking powder biscuit dough or mix. Divide dough; press a layer of dough into a greased baking dish; add filling (reciDe below) and top with remaining aough. Bake at 400 degrees about 25 minutes or until crust is brown and filling tender. Cobbler Filling. Combine one cup sugar and three tablespoons enriched flour; mix well with one (drained) can red tart pitted cherries (saving the juice for the Foamy Sauce recipe) com bined with two cups cooking appies sliced as for pie. Cherry Foam Sauce. Combine one cup tart red cherry juice and one cup sugar. Cook to a thick syrup; then pour slowly over two stiffly beaten ? whites. Add one-half teaspoon almond flavoring and a few r drops of red vegetable coloring to make desired shade. Serve hot or cold as sauce for topping for cobbler or save for serving :wilh any plain cake. Eight .: servings. Quick Casserole. Heat canned : chili con came (without beans) to simmering. Put 2i cups I cooked large dry lima beans in small casserole. Economical pork roasts are cut from the end of the loin. The loin end roast nearest the shoulder is known as the blade loin roast and that nearest the ham section is- the pork sirloin roast. Both are prepared same as expensive cuts except that longer cooking is required. Roast fat-side-up- in moderate, 325 degree oven, 45 to 50 min utes to the pound. Give pork roast gourmet touch by rubbing generously with sage or cara way seed before roasting.
