Milk, the most nearly perfect food, is poor in all of these elements. Even the purest, highest grade cow's milk (Grade A Raw from tuberculin-tested herd or Certi fied Milk which is not pasteur ized) contains very little vita min at best, and boiling, scald ing, pasteurizing or evaporating destroys what little C the milk may have contained when it was fresh. ' . If the baby does not receive enough vitamin C, also called as corbic acid, daily, scurvy will oc cur and contrary to a popular and medical belief, redness, sore ness, swelling and bleeding of the gums and loosening of teeth are by no means the earliest signs or symptoms of scurvy. Both popular and medical litera ture still . pass along a lot of hooey in reference to scurvy. Any one who would like to learn the truth about it should read Stefansson's The Friendly Arctic (Macmillan, '21), than which a more interesting and instructive book I never cracked. . The earliest symptoms- and signs' of scurvy in infancy are loss of weight or failure to gain weight as usual, fretfulness, loss of appetite, peevishness, crying when handled, perhaps the ap pearance of ''black and blue" spots in skin after trivial injury or none, and small hemorrhages into skin or mucous membranes. Beein when baby is three weeks old giving orange juice or fresh or factory canned to mato iuice. mixed with .water and half and half, a teaspoonful daily for a few days, tnen two or three teaspoonfuls daily for a few days, then a tablespoontui M00-0-0S and MUSINGS dally and so on, until the baby takes at least three or four table spoonfuls of orange juice or to mato juice every day. Do not heat the juice. Use only freshly expressed juice or that from a freshly opened can. Vitamin C is destroyed by heating and' by standing" for hours, whether in refrigerator or not. If for any reason the baby cannot have or will not take such fresh fruit juice or tomato juice, pure vitamin C (ascorbic acid) tablets may be used in stead one tablet (50 mg.) daily, dissolved in a tablespoonful or so of water. Grapefruit, lemon, lime and other citrus fruits or their fresh ly expressed juices are the rich est sources of vitamin C. Nearly all fresh . vegetables or their juice taken raw will prevent scurvy, and so will raw meat. Cooking or long storage largely deprives the food of its antiscor butic value.
