Pare a large grapefruit. Separate into segments. Cut an avocado in half; peel, cube and combine immediately with grapefruit to prevent discolor ing. Flake V4 pound of fresh cooked crab meat or 1 flat can crabmeat (cooked shrimp is good, too). Shred one head of lettuce and combine with other ingredients. Salt and pepper lightly. Blend together ,4 cup mayonnaise and V cup chili sauce. Toss with other ingredi ents gently. Worthy of any spe cial occasion. Six or eight small servings; four main course. Gourmet Touches for Pork If you choose plentiful, economy-wise pork roast for Mother's Day (or any other day), it is best roasted fat side up on a rack in an open roasting pan, allow ing' 45 to 50 minutes per pound cooking time in a moderate oven, 325 degrees. Consider sea soning it in one of these inter esting ways. Before roasting the meat, scatter caraway seeds over it. Fair quantities will continue through out the summer as usual but watch May markets for best buys for eating fresh, for freez ing and for "preserving." If you are home canning or freezing strawberries, talk over "timing" now with your fruit man. Pa cific Coast states are now large commercial strawberry crop producers. Strawberry jam and frozen strawberries continue to head lists of commercial packs. Citrus fruits are plentiful. Fresh grapefruit and oranges, canned grapefruit sections, canned and frozen concentrated orange juice are all very good buys. Watch newspaper advertisements and displays. Eggs continue plenti ful at reasonable prices. Two eggs for teen-agers as well as their father at breakfast is a good idea. They'll enjoy cus tards more often, too. Pork products, both fresh and "cured" continue the best meat buy. In order to divert from the market temporary surpluses of pork and eggs, the U. S. De partment of Agriculture's Pro duction and Marketing Adminis tration has announced a pro gram to purchase shell eggs and smoked pork products for distri bution to non-profit school lunch programs and other eligible out lets. So do not be surprised when pork products and eggs show up often on your chil dren's school lunch program menus. Other plentiful foods include dried prunes and rai sins, domestic dates, fresh fish, frozen fish fillets, peanut but ter, cooking fats and salad oil, turkeys and dairy foods. Broil ers and fryers are reasonably priced but turkeys offer the best value if you are planning a week-end family reunion for Mother's Day or other special occasion. Seasonal spring vege tables are likely to have vari able prices because of spring rains. Reasonable prices mark asparagus, cabbage, carrots, cel ery, lettuce, onions, most bunched vegetables. Grocery ad vertising columns reveal many good buys. Good fruit buys In clude grapefruit, oranges with reasonable prices on avocados. Now Is the time to enjoy straw berries to the fullest; make can ning or freezing plans. Income of Forest At Record High In Recent Months Returns from the Rogue Riv er National forest totaled $924, 543 during the first three quar ters of fiscal $1951-52, it was an nounced today by northwest re gional forester J. Herbert Stone, Portland. Receipts from the 19 national forests in Oregon and Washing ton during the same period amounted to a total of $22,823,- 995, a new record, according to Stone. This represents an in crease of more than $5 million over the first nine months of fis cal 1950-51, he said. Indications are that national forest receipts for this fiscal year will exceed expenditures for the protection, management and de velopment of national forests by more than $10,000,000, the re gional forester stated. All receipts from the sale of natural resources and the rental of lands are deposited in the fed eral treasury. The winners will receive an expense-paid trip to United Nations headquarters in New York and will spend a full week in the city. The nation-wide tour is spon sored by the Sovereign Grand Lodge of the Odd Fellows under the title "United .Nations Youth Government."
