NUTRITIONAL REQUIREMENTS OF GROWING CHILDREN A healthy, active, growing child and children grow more or less until they arc eighteen to twenty t h ree years of age, altho the rate of growth gradua 1 ly di minishes in the later year s can handle, di gest, a s s 1 m i late, metabol ize, oxidize, burn, uti 1 i ze perhaps actual ly more food, particu 1 a r 1 y Dr. Brady carbohydrate (starch or sugar, as in candy, ice cream, cake, bread, potato, syrup) than his or hec sedentary or comparatively in active parent needs or can take to advantage. The child who plays as hard as a normal young ster should play burns up a lot of calories whereas the seden tary adult just stores the surplus fuel (carbohydrate) as fat. But it is wrong to assume that the young person, or any person, is well nourished if he or she gets plenty of such carbohydrate food to eat. The truth is that most North Americans with mal nutrition (nutritional deficiency disease) get too much to eat of the wrong kind of food. These are the least of the prin cipal essential nutritional ele ments required daily to keep a child of, say, six years of age from developing signs of nutri tional deficiency: Fat or oil fat of cream, milk, butter, bacon, pork, ham, egg yolk, peanut oil, cottonseed oil, olive oil, lard, etc. llj ounces 350 calories. Protein lean meat, white of egg, curd or cheese part of milk, as well as the protein in peas, beans, nuts and pea. nuts 2 ounces 240 calories Carbohydrate any kind of su. gar or starch, as in cereal, bread, honey, syrup, potato, fruit....9 ounces 940 calories. Calcium 15 grains the amount in a quart of milk. Phosphorus 12 grains the amount in a quart of milk. Iron one-fourth grain the amount in a dish of prunes. In 4 ounces of peas, in 4 ounces of lean beef, in 2 ounces of lettuce, ill 214 ounces of oat meal, in three ounces of egg yolk. Other mineral elements will be adequately supplied if the cal cium, phosphorus and iron re quirements are met by the diet. Vitamin A, 4000 units Vitamin D, 400 units. Vitamin C, 'JO milligrams. Vitamin B-complex being a group of vitamins the amounts cannot be so simply slated, but the child needs not less than 1 milligram (approximately 300 units) of Bl (thiamine) daily. The best source of B-complex is wheat or wheat germ. My advice to parents is, don't take these figures too seriously I'd be sorry for the kid whose diet is so measured. Probably any youngster who polishes off three glasses i.Wi pints) of milk, eats either some fresh meat or else an egg or two and fresh fruit, whatever is available or If none available then fresh or factory canned to mato or tomato juice every day, will get nearly if not quite all of these essentials.
