mins. By optimal I mean at
least three times as much of the
vitamin as may be required
daily to maintain good nutrition
and prevent manifestations of
deficiency.
Now just how much of each of
these vitamins does the average
adult require daily to maintain
good nutrition and prevent defi
ciency manifestations (symp
toms, complaints)?
Nutrition authorities agree
that the daily minimum require
ment of vitamin C (ascorbic acid)
is 30 miligrams. That is the
amount of vitamin C in, say one
half of a fresh tomato, one
quarter of a lemon, one-half of
an orange, one ounce of raw cab
bage, or not less than six ounces
(small glassful) of commercially
canned tomato juice, or 3V4
ounces of raw turnip.

south as a staple (selling for a
moderate price) for use in the

The nutrition authorities still
disagree about the minimum
daily requirement of vitamin D,
but various authorities estimate
it at from 400 to 1000 U.S.P.XII
units. Whole milk, cream, but
ter, egg yolk, oysters, and fresh
or canned herring, sardines,
tuna and salmon are practically
the only food sources of vitamin
D, and these hardly supply
enough to maintain good nutri
tion. In order to prevent rickets
it is now customary to give in
fants and young children a daily
ration of vitamin D in the form
of fish liver oil or some concen
trate of it or tasteless synthetic
vitamin D.
