' BREAKFAST Here Is a breakfast menu sub mitted in a contest to supply a specimen diet list that will pro vide all the vitamins and mine rals re quired by an adult to main tain good nu trition. This was submitted by the girls' physical educa tion classes of a public high school: O n e half lemon in glass of hot Dr. Brady water before meal 8 oz. glass of orange juice 1 large serving wheat germ cereal 1 cup milk on cereal 1 slice whole wheat toast pat butter 1V4 slice bacon, dripped 1 soft boiled egg 1. glass whole milk (8 oz.) There you are. Nine items, no less. The high school girls, un der guidance of their physical education teacher, I Infer, give what they estimate as these amouts of vitamins in the break fast: Vit. A 3.657 units, Vit. B-l 2,818 units, Vit. C 3,000 units, Vit D 22 units, etc. The directions say one should take the lemon juice ln a glass of hot water before breakfast. That is out. We are serving only breakfast. From the pint, more or less of milk, the soft boiled egg and the half pat of butter the girls estimate one gets 22 units of vitamin D. That may be true in exceptional instances, though I'd say the breakfast would given 10 to 15 units of vitamin D. But the lunch menu the girls offer includes two 8 oz. glasses of whole milk, M pat of butter, no other items containing even traces of vitamin D, yet they esti mate the lunch provides 485 units of vitamin D! I'd say it pro vides 10 units. But I suspect the girls and their teacher were con fused by the label on the milk bottle perhaps they happened to choose milk doctored or forti fied with vitamin D Usually about 400 units added to the quart. But that's out, too, for the requirements were clearly speci fied undoctored foods. I hate to seem too critical indeed, I expect these high school girls are going to get the prize or at least some special award for their menu, but first I have to find their physical education teacher, who seems to be off on vacation. To eat whole wheat toast and also a cereal at the same meal is as sensible as it would be to eat French fried potatoes with baked potatoes on the side. In the Rejuvenation Diet or the outline of a basic health diet in the booklet "The 7 Keys to Vite" (copy for 25 cents and stamped self addressed envelope. but no clipping, please) there is for breakfast a glass of orange juice (8 oz.) and a glass of milk (8 oz.) a pint of fluid and some readers boggle at that quantity. The high school girls apparently do not mind taking a pint of fluid plus a cupful of milk on cereal, That is all right, and even more milk if you like. The Re juvenation Diet as outlined in the booklet purports to be a high vitamin, high mineral, correc tive, protective diet, a basic health diet on which to build or pattern your own diet. As it stands it is a good reduction diet too. But it docs not, and in my opinion no specific diet one can conveniently follow in these days of refinement, preservation and manipulation of food will pro vide all of the vitamins and minerals required to maintain good nutrition and good health, I believe it is necessary and ad- visable to supplement our dairy diet with a fair ration of vitamin D and Bl (thiamine) and G. (rib oflavin), especially in childhood, adolescence and old age.
