Main Dial 3170 COTTAGE CHEESE Cottage cheese is difficult to digest. With a strong digestive system, it is a source of a good supply of protein. Protein of ex cellent quality may be supplied the system by mixing in equal parts milk and navy beans. This combination is said to be equal to porterhouse steak. It is much richer in vitamins and minerals, and a great deal less expensive. It is not advisable to substitute , cottage cheese for milk, as it A(oes not supply calcium in suf ficient amount. Cottage cheese supplies only 154 milligrams to the cup. This is less than one fifth of the recommended daily intake of calcium. A cup of milk mpplies nearly twice as much. The food value received from cottage cheese is proportional to the ability of the digestive sys tem to properly digest it. Also its value depends much upon the manner in which it is made. Elliott, a member of the state dental board, returned Sunday from Portland, where he assist ed in administering examinations to 89 applicants to the state board.
