How to do with eggs
In times like these It's a wonderful
thing to know a lot about eggs for.
roperly prepared, eggs are the oasis
or a wide variety of delicious diBhea.
DO VOU KNOWf
Egg Equivalents
In most recipes calling for eggs,
medium-size eggs are used as the
basis for measurement. ;
4 to 6 whole eggs equal 1 cup
8 to 10 egg whites equal 1 cup
10 to 14 egg yolks equal 1 cup
To prevent yolk of hard cooked eggs
; from darkening: Remove from heat
' and plunge immediately into cold
water.
'
Eggs should not be washed before
storage because water removes the
protective coating on the shell essen
tial to keeping quality of eggs.
E$X yolks store well when covered
with cold water, milk or salad oil;
covered tightly and stored in refrig
erator. Egg whites store well when covered
tightly and stored in refrigerator.
For best volume eggs should be at
room temperature before beating.
.
Eggs should always be cooked at low
temperatures as high temperatures
toughen the protein.
OILID OR SOFT CUSTARD
(A way with egg yolks)
A delicate, smooth sauce
4 egg yolks 2 cups milk
!4 cup sugar 1 tsp. vanilla
t tsp. salt extract
Beat egg yolks slightly with spoon in
top of double boiler; add sugar and
salt; mix well; add milk; and cook
over rapidly boiling water about 10
to 15 minutes, or until mixture is
slightly thickened and coats spoon,
stirring occasionally. Remove from
stove at once; add flavoring; and
pour into cool bowl. Chill before
serving. Makes 2 cups custard.
