Extension Service Neighborhood To Bo Units of Information Preliminary work has already been done in Jackson county toward setting up the neighbor hood leader plan in every com munity. This is a war time em ergency step in maintaining con tact with every farm and rural family. A meeting was held last Monday at which chairmen of the subcommittees of the county planning group 'zoned the county into fourteen districts and a woman and a man were tentatively appointed to head the organization in these dis tricts. Within the district far mers will be organized ' into groups of from ten to twenty with a leader. The idea being to meet in small groups with the least expense in gasoline and tires and discuss matters in connection with the war emer gency; the information to be provided by the extension service. This neighborhood plan has been worked successfully in some states and will be espe cially important at the present time, as a form of contact is necessary to keep the people In the rural districts informed. The history of the first war shows that the agricultural industry was the worst sufferer from the war-time price boom which was followed by an agricultural col lapse from which the industry is only just now recovering. With this plan of close coor dination of farms it is felt that the information received will be to large extent responsible for conditions following the present war. The community neighbor hood organizations will be af fected throughout the county within the next two or three weeks. A.A.A. Compliance Check Made At Office In the past, a crew- of men has been employed by the agri cultural conservation office to visit farms and check compli ance with the farm program be fore payments were made. This plan has been changed for the present year with the idea of conserving rubber and man power needed in agriculture The farmers will be called to the office at which time their compliance blanks will be made out and signed. As the 1942 year ends September 1, for the . first time this year, it will be necessary for farmers to come to the office . to fill out these blanks prior to that time. xnis year compliance vnetn Is more than a statistical gather ing of information in the farm program, it amounts to an In ventory of the county's capacity for production of the foods needed to win the war. The co operation of farmers in giving this information promptly will be a contribution to the war ef fort and will expedite benefit payments this year. By R. G. Fowler, County Agent. Cherry Certification Needed In Shipping In order to ship cherries into the states of California and Montana, it Is necessary that each shipment be accompanied by a certificate stating the cherries were grown in Jackson county. These two states require this certificate in order to protect themselves against importing the cherry fruit fly, however, as Jackson county is free from this pest any cherries grown here can be certified for shipment. Any one wishing to take cher ries grown, in this county into California by auto can obtain a certificate at this office. If they wish to ship the cherries by ex press they may obtain a certi ficate at the express office. Other fruits require no certifica tion and cherries going to states other than Montana or Califor nia may be shipped without re striction. By C. B. Cordy, Assistant County Agent. Preserving By Freesing Easy Procedure Strawberries are right at the hpieht of the season for freez ing. It is imnortant that straw berries be at the right degree of maturity for freezing, airawoer ries that come late in the sea usually most satisfactory for freezing, because they are smaller, sweeter ana iirmer than earlier berries. One good rule to re mom hpr U that fruit should be in the locker four hours after picking If possible. wash fruit thoroughly and pack in containers. With berries either dry sugar or sugar syrup may be used. Many prefer the dry pack, however. The war ra tion of sugar, 1. e. W cup to one quart, is adequate for frozen foods. Those who wish a sweet er product may use corn syrup or honey. Honey gives a distinct flavor to the fruit and may be substituted for half sugar with excellent results. Corn syrup may be substituted for one third of the sugar. It is well to re member however, that corn syrup is only one half as sweet as sugar, whereas honey has the same sweetening power. The containers used for pack ing frozen foods are varied. The waxed paper containers are in expensive and may be used two or three times if wasnea n cold water so as not to melt the wax. Glass jars that are not suited for canning may be used in freezing as an absolute air tight package is not required. However, it is a good plan to use rubbers on glass jars to make a tight seal. One precaution when using glass, do not screw the lid down tightly until food is frozen, and allow room for expansion of food on freezing. This latter is true of all containers if a syrup or wet pack is used at least one inch must be left free at the top for expansion. Frozen foods are nearly as rich in vitamins and minerals as the fresh product depending upon the length of time required from picking to freezing. No other method of food preserva tion retains the original flavor, color and shape of the food as well as freezing. Many people do not realize the value of their lockers for foods other than meat.
