But make It strong er than your breakfast brew. It you ordinarily use one rounding table spoon of coffee to a cup of water, for Vnmnle. increase It to one and a naif tablespoons to a cup of water. The well-appointed after-dinner coffee tray will contain: dainty, small cups, after-dinner coffee spoons, the coffee pot, a small sugar bowl with tongs and a small pitcher of cream. Ordinarily, the demi-tasse la served without sugar or cream. But some people prefer a little sweetening and cream so, for courtesy's sake, it ts best to provide them. If you like, you may aerve a small confection with the demi-tasse. As sorted cream patties, fondant covered with nuts, candled fruits, small chocolate-coated candies, candled ginger or salted nuts are all suitable. Very fresh chocolate-covered creamy peppermints are also quite refresh ing. Mucha Mint Patties Follow usual directions for making fondant, substituting very strong black coffee for water in recipe. To make the Mocha Mint Patties: melt the rlptned fondant over hot water. Take from fire and flavor With few drops oil of peppermint. Stir in two tablespoons powdered sugar for every cup of fondant. Drop from tip of the spoon onto a fiat surface covered with waxed paper. When mints are firm, dip each one, with fingers, halfway into melted confectioner's chocolate, (kept warm over hot wa ter). Lift out onto waxed paper. Small hot rice croquette served with hot tomato sauce make a very satisfying main course for luncheon or auppcr. The combination la also tasty for Sunday morning "brunch When you use mayonnaise or salad dressing on sandwiches sec that it is quite thick, so it will not run over the edges of the bread. Butter both slices of bread to seal It so that the filling or reilsh won't soak in. When adding nuts to conserves slice or cut them Into pieces of uniform size so they will be distrib uted evenly through the mixture. For a delicious hot sauce to serve with lamb, melt half a cup of cur rant Jelly over hot water, add a teaspoon of mint extract and serve at once. In ft small dish.
