EVER notice how quickly meats will soak the wrapper
in warm weather? Ever have the wrapper tick to the
meat and have to pick it off in bits before you could
cook it?
Well - parchment is the only grease and moisture
proof wrapper. Wax paper will help a little and is much
cheaper, but it should never be wrapped next to fresh meat
as the paraffine tends to discolor it.
