WHY THE FUSS
OVER SAUSAGE?
WE WERE asked that this week. Frankly
we; are not fussing. We're merely
trying to find out how you want us to pre
pare what we believe to be the best liked of
all meats when it is made to suit your taste.
There are two ways to make sausage. One
is to take' the trimmings from various meats
including pork grind and season them and
call it sausage. It's good food and furnishes
an outlet for otherwise good meats that are
hard to sell.
. The other way is to keep this old Ameri
can favorite free from adulteration. Make it
of good cuts of lean pork, with just enough
fat to fry it. Not too much or it will fry
away or else be too rich to be healthful.
Now for the seasoning: some like a mild
ly seasoned sausage while others like plenty
of sage. Tastes are about equally divided in
this respect. That is why we have both kinds
mild for those who prefer it and full farm
sage strength for the man who will drive 20
miles into the country to get a good mess of
sausage.
