Milk, Green Vegetables,
Eggs, Lean Meats and
Grains Supply Sufficient
-Mineral Human Machine
Some of the foods that go into i
veil. planned diet are there to supply
the body's need for minerals cal
cium, phosphorus, Iron, and various
other minerals. Some of these . are
needed In our food as materials for
good bones and blood, and many
more of them serve to regulate the
processes that go on In the human
body to keep It alive. The ordinary
Individual gets these minerals In hts
food. Just as he gets the other ma
terlals he needs provided he chooses
the right foods. That means, says the
Bureau of Home Economics of the U.
S. Department of Agriculture, a va
riety of foods sufficient to furnish
the proteins, carbohydrates and fats
needed as body-building materials
and as fuel, and the necessary miner
als and vitamins to keep the body In
good running order.
All Easily Available
All these necessary food substances
are available In the common, every
day articles of food grown on the
farm and sold in the market, the bu
reau points out. But foods very so
much In their composition they vary
so much in their mineral content as
well as in other food values that
there Is one more reason why the
meal-planner should make sure of
providing ft Efficient variety of foods
In each day's menu. For minerals
alone, it takes such a variety as milk,
green vegetables, eggs, lean meats,
and grains. To provide all the neces
sary food materials. It takes a great
er variety than that.
In the ordinary sense of the word
the so-called "minerals" necessary In
our food are not all mineral. Nutri
tionists use the word for convenience,
however, to cover a group of such
elements as sodium, potassium, calcl- j
um. magnesium,, iron, copper, man- i
ganese. Iodine, chlorine, phosphoius
and sulphur all known to be Indls-
pensable to the hitman body. These !
elements occur In many of the plant
and animal substances we use as
food and that means nearly all our
food. Thus. In any reasonably varied
diet, we get enough or most of the
minerals. To get enough calcium and
Iron, however, requires planning to
Include the foods that supply them.
Milk and meat, for Instance, differ
In their mineral content so much
that although we use them both for
their phosphorus, we use milk for its
calcium also, and meat lor its Iron
each supplying something the otner
lacks. Pure fats and pure sugars are
the only foods that contain no min
eral sus tan ce at all.
FlU Varied Needs
Minerals are needed by the body
for more than one purpose. Calcium
and phosphorus are necessary as ma-1
terlals for good bones and teeth, iron I
t one of the necessary materials for I
good blood. But these and all the oth- '
era act In various ways to regulate '
the life processes. They are absorb
ed from the digestive tract into the
blood and carried throughout the
body. Dissolved In the body fluid t,
in the blood, the digestive Juices, the
thyroid and other secretions they
give to those fluids their characteris
tic influence upon muscles, nerves
and other tissues.
Some of these mineral compounds
we can take, or see. or recognize In
some other tangible way. Sodium
chloride, or common salt, we recog
nize In tears. An Iron compound gives
the blood Its color, and the clotting
stops the flow of blood from a cut
finger Is due. In part, to the calcium
In the blood. Calcium, potassium, and
sodium play an important part in
keeping the rhythm of the heart beat.
Hydrochloric acid, composed of hydro
gen and chlorine. Is essential In the
gastric Juice, which does Its work in
the stomach.
It is the mineral elements In our
food that keeps some fluids acid as
the gastric Juice, again and keep
others alkaline, the blood for exam
ple, in general they help to malntaia
the "acid-base balance" in the body,
some Indispensable
Certain minerals, then, are indis
pensable to the body, and therefore
necessary In our food. And it Is easy
enough to get them If we have the
right foods the right variety of foods.
As a matter of fact, all the miner
als we need are supplied In milk, vxg
etables, fruits, lean meats, and fish
or eggs. The most Important points
for the meal-planner to remember
are:
For calcium: Tho best sources are
milk, cheese, leafy vegetables, and
some sirups molasses, sorghum and
sugar-cane sirup.
For. phosphorus: Lean meats, eggs.
milk, whole grains, and beans or peas.
For iron: Egg yolks, lean meats( es
pecially liver), oysters' and shrimps,
green leaves, beans or peas, dried
fruits, molasses, sorghum and sugar
cane sirups, and whole grains.
Sea foods such as oysters, clams,
lobsters, and shrimps, and the salt
water fish cod. mackerel, blueflsh,
halibut, flounder, tuna, salmon, and
many other salt-water food fish, are
rich sources of iodine.
